OK, start in Sydney.
Head south, towards the Royal National Park - don't get stuck on the freeway or you will be on a big fat road and see nothing all the way to Wollongong.
Drive through Royal National Park - stop for a picnic.
Head south towards Wollongong along the cliff sides.
(Stay overnight in a hotel on the edge of the cliff at Coledale if you can afford it - try their oysters, and steak - best I ever had).
At Wollongong, head for the harbour - stop there and have fish and chips, either from the kiosk on the shore, or one of the seafood restaurants on the quays.
From Wollongong, keep heading south towards Bateman's Bay.
Check out the blowhole at Kiama, and Nowra.
Shortly before Bateman's Bay, follow the sigs to Durras/Murrumurang National Park - you can stay in a cabin (or camp) practically on the beach there, among the kangaroos.
From Batemans Bay, you can head inland up the Clyde, via Braidwood (stop and have a walk around), to Canberra.
If you want the scenic route to continue (a lot) further, keep going towards Merimbula, Tathra, Bega and Moruya. (Stay at Tathra).
Then head up the valley towards Araluen and to Canberra that way.

I think the scenic drive can take as long as you want. It usually takes me 3hrs to drive from Canberra to Sydney straight up the highway. But it really depends on how many little towns you want to stop at on the way and have a coffee.

If at all possible I take the scenic route Jo unless there is limited time to get where I am going and then it is motorway for quickness. x
