I am not the greatest mint lover but even I have to admit that the fusion of mint and chocolate will silence the toughest critic. This recipe from "Hershey's Kitchen" will satisfy the strongest chocolate craving while leaving a refreshing aftertaste. (This cookie can be made with any flavour chips and all by itself).

Change to: cookies US Metric
1 cup butter, softened
1 cup granulated sugar
3/4 cup packed light brown sugar
2 teaspoons vanilla extract
1/2 teaspoon salt
2 eggs
2 cups all-purpose flour
1/2 cup cocoa
1 teaspoon baking soda
1 2/3 cups mint chocolate chips

Heat over to 375 degrees F.
Beat butter, granulated sugars, brown sugar, vanilla and salt in a large bowl until creamy.
Add eggs; beat well.
Stir together flour, cocoa and baking soda.
Gradually add flour mixture to butter mixture beating until well blended.
Add chocolate chips to batter.
Drop by rounded teaspoons onto an ungreased cookie sheet.
Bake 8 to 10 minutes or until set. Cool slightly; remove from cookie sheet to wire rack.
Cool completely

1 cup sugar

3/4 cup butter, 1 1/2 sticks, room temperature
2 eggs
1 teaspoon vanilla
2 tablespoons water
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
6 ounces chocolate mint candies, such as Andes brand
pecan halves
PREPARATION:
In a large bowl, cream sugars and butter. Add eggs, vanilla, and water; beat well.
Combine flour, baking soda, and salt; add flour mixture gradually to egg mixture; stirring to mix well. Chill dough for at least 4 hours or overnight.
Wrap each mint completely in cookie dough.
Place chocolate mint cookies 2 inches apart on lightly greased baking sheets and press a pecan half onto the top of each cookie. Bake at 375° for 7 to 9 minutes, or until cookies are golden brown.

Andes Mint Cookies


1 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup butter or margarine
2 large eggs
1 teaspoon vanilla extract
2 tablespoons water
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
6 ounces Andes mints
Pecan halves

Preheat oven to 375 degrees. In a large bowl, cream sugars and butter or margarine. Add eggs and water. Beat well. Mix flour, baking soda and salt well. Add gradually to egg mixture. Chill dough overnight (it is important that the dough be well chilled). Wrap each mint completely in cookie dough. Place 2" apart on lightly greased cookie sheets and put a nut half on top of each cookie. Bake 7-9 minutes until golden brown. Allow to cool thoroughly on wire racks.

I use the Nestle Tollhouse chocolate chip cookie recipe off the bag, but instead of chocolate chips, I buy those Andes Mints (I hear that they make them as chocolate chips now also) I unwrap them one by one and break them up. The rest is cake!

Buy a bag of mint chocolatee chips and follow the cookie recipe that is usually on the back of the package. Also try going to www.foodtv.com and looking up mint chocolat chip cookies and see what pops up.
