What are those things and Jeff Corwin rides them like in the amazon and it has a weird thing on the bottom that fills with air and then it has these big fans on the back?

It's called an "Air Boat". Very flat bottom for shallow water with huge fan on the back to propel it.

i cant remember what they are called . but you use them in florida to see alligators in swamps
