yes and many people will disagree but it does indeed go rancid and it looses all its health benifits as a result

Olive oil (and most other unsaturated oils such as peanut, corn, vegetable, soybean, etc.) does not need to be refrigerated after opening. As for shelf life of olive oil, that depends on the olive variety, ripeness when pressed, care in processing, filtering, etc. It also depends on the storage after it has left the producer. Unfiltered olive oil bottled in clear glass and kept in high temperatures or bright light without a cap may only survive 3 months. A filtered olive oil with high polyphenol content (antioxidants) packaged in a well sealed tin or dark bottle may last 3-4 years. For best results, check the label for a "use by" date. Store olive oil in a cool, dark place (but not the refrigerator).

i do not use olive oil a lot and it is expensive...so I do put it in the refrigerator and take it out about an hour before i use it. I can't tell you how many i threw away because they went rancid...

The only time I have ever put olive oil in the fridge is when I made italian dressing, and it turned solid, so I don't keep it there, just in a cool dark place like the pantry, or a cabinet that is not above the stove.

good question! it doesn't need refirgeration is you live in a cool environment. however, if you live in the tropics, where it is constantly sweltering, i do suggest refrigerating any oil you may have for cooking especially if it is not being used for a long period of time, because the heat causes the oil that is left out in the heat for a long time to go rancid.

Refrigerating it will keep it from going rancid, but it will solidify, so you'll have to warm it up a bit before using it.

nooo... u don't refrigerate oil!

oil has preservative qualities! Like salt, or alcohol and vinegar!

no it doesn't. i keep all my oils at room temp. They are not an issue for food borne illness, but they will go rancid after a while. Just keep using them and buying new.
