Fruit Pizza
"A cookie dough crust, cream cheese filling, and fruit topping. Tip: For a quick crust, use one package of ready made sugar cookie dough rolled out to fit a pizza pan. Use an assortment of fresh fruit such as bananas, peaches, blueberries, kiwi, pineapple, and strawberries."

INGREDIENTS:
1/2 cup butter, softened
3/4 cup white sugar
1 egg
1 1/4 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 (8 ounce) package cream cheese
1/2 cup white sugar
2 teaspoons vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees
In a large bowl, cream together the butter and 3/4 cup sugar until smooth. Mix in egg. combine the flour, cream of tartar, baking soda and salt; stir into the creamed mixture until just blended. Press dough into an ungreased pizza pan.
Bake in preheated oven for 8 to 10 minutes, or until lightly browned. Cool.
In a large bowl, beat cream cheese with 1/2 cup sugar and vanilla until light. Spread on cooled crust.
Arrange desired fruit on top of filling, and chill.

Try making this- Pirate Casserole:
1 Pound ground pirates (I mean ground turkey or ground beef)
1/2 cup chopped celery
1/2 cup green pepper
1/2 cup chopped onion
1 can (4 ounces ) mush rooms, drained
1 can (10 3/4 ounces size) cream of mushroom soup*
1 an (10 3/4 ounces) cream of chicken soup
1 soup can of water
1/2 cup uncooked rice
buttered bread crumbs or crushed cornflakes (maybe crushed Special K)
Preheat oven to 350. Brown the pirates (I mean the meat) with the celery, green peppers, onion and mush rooms. Mix soups, water and rice. Combine meat mixture and soup mixture, and put in a 2 qt casserole pan. Top with the buttered bread crumbs or crushed cereal. Bake for 1 hour.
Recipe serves 4 to 6.
* Any variety of Cream Of Mushroom soup.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

Cottage Cheese Chicken Enchiladas

Yields: 6 servings
"Cottage cheese lends a lighter texture to chicken and cheese enchiladas, bathed in classic red enchilada sauce."
INGREDIENTS:
1 tablespoon vegetable oil
2 skinless, boneless chicken breast halves - boiled and shredded
1/2 cup chopped onion
1 (7 ounce) can chopped green chile peppers
1 (1 ounce) package taco seasoning mix
1/2 cup sour cream
2 cups cottage cheese
1 teaspoon salt
1 pinch ground black pepper
12 (6 inch) corn tortillas
2 cups shredded Monterey Jack cheese
1 (10 ounce) can red enchilada sauce
DIRECTIONS:
1. To Make Meat Mixture: Heat oil in medium skillet over medium high heat. Add chicken, onion and green chile peppers and saute until browned, then add taco seasoning and prepare meat mixture according to package directions.
2. To Make Cheese Mixture: In a medium bowl mix sour cream with cottage cheese and season with salt and pepper; stir until well blended.
3. Preheat oven to 350 degrees F (175 degrees C).
4. To Assemble Enchiladas: Heat tortillas until soft. In each tortilla place a spoonful of meat mixture, a spoonful of cheese mixture and a bit of shredded cheese. Roll tortillas and place in a lightly greased 9x13 inch baking dish. Top with any remaining meat and cheese mixture, enchilada sauce and remaining shredded cheese.
5. Bake at 350 degrees F (175 degrees C) for 30 minutes or until cheese is melted and bubblybathed in classic red enchilada sauce."

3 large eggs -- separated
3/4 cup granulated sugar
1/2 cup butter
1 cup packed light brown sugar
2 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
3/4 cup strong cold coffee
3/4 cup Kahlua
FROSTING
6 tablespoons butter
1 pound confectioners' sugar -- sifted
3 tablespoons Kahlua
2 tablespoons hot coffee -- more if needed
1. For cake: Grease and flour two 9-inch cake pans. Preheat oven to 350°.Beat egg whites until frothy, then beat in granulated sugar until stiff peaks form; set aside. In large bowl, cream butter and brown sugar until fluffy. Beat in egg yolks one at a time. In small bowl, sift flour, cocoa, and baking soda together. Add to creamed mixture alternately with coffee and Kahlua; blend well. Fold egg-white mixture into batter. Pour into prepared pans and bake 30 to 35 minutes, or until done. Cool 20 minutes, invert onto
wire racks and cool completely before frosting.
2. For frosting: Cream butter and confectioners' sugar. Add cocoa powder, Kahlua, and coffee. Beat until smooth.

Italian Sausage and peppers
1 package of italian sausage
3 small peppers (red, green, yellow) cut in strips
1 can diced tomatoes
1 can tomato sauce
italian seasoning
oregano
salt
pepper
Squeeze sausages out of casings in your desired lengths. Brown them in a large pot, pour off excess oil. Add tomatoes and sauce. Add seasonings to your liking. Cover and let simmer for 30 minutes. Add peppers, cover and let simmer another 20 minutes. Serve over rice.
