easy. slice your citrus very thin.

take a part and mix 1 part water ot 1 part sugar (make sure equal amounts to each other)

when sugar disolve add the citrus rings.

lay flat on a oil spray sheet pan, and bake at a very low tem, like 250 to dry out, remove immediatly from sheetpan and place in cool dry area (not fridge) and they will crisp up nicely. good luck!

Candied Lime Peel

2 limes
1/2 cup granulated sugar
1 1/2 cups water

Squeeze juice from limes and save in refrigerator for later use. Slice lime peels thinly. In a heavy saucepan on high heat, boil sugar and water for 3 minutes.

Add lime peels. Reduce heat to medium and simmer for 1 hour, or until skin is softened.

Cool on a wire rack set over a cookie sheet. Dry on the rack for 12 hours.

Refrigerate in a covered container.

I just use regular sugar, slice limes real thin, place on a cooling
rack and dry out.

I do with with grapes, lemon slices etc.

When the sugar is crusted, they are done.
