I make tomato juice with mine when I get too many to handle like that.........toamato soup is also good.
Here's the recipe
1 qt Tomatoes
3 sm Onions; chopped
1 pt Water
Salt & pepper to taste
Butter the size of a walnut
pinch Baking soda
Soda crackers
Put tomatoes, onions and water in a kettle and
stew for about an hour. Remove from stove and
strain through a sieve. Put back into kettle and
add salt and pepper, butter, soda and milk. Bring
to a boil. Crumble in soda crackers and serve. You
could simply open a can of Campbell's, but this is
really better.

I come from an Italian family. In the summer when my tomatoes come in, I make Bruschetta every night as a side dish or in place of tossed salad.
Chop tomatoes. Drizzle with olive oil and a little balsamic vinegar. Add a fresh basil leaf (if you have it, otherwise skip it). Crush a garlic clove and add it in. Dried parsley. Salt (quite a bit), pepper. I also add a few tiny slices of red onion, but you can leave them out if the kids dont' like them. Squash the tomatoes a little to create a nice juice in the bowl. Serve it over fresh Italian bread, or with bread on the side. Some optional things you can add if you want are black olives, or cucumbers, or fresh mozarella. It's very filling and healthy. Adjust the recipe to taste.

I'd like to offer you a variety of ideas. For actual "eat now" items go with tomato soup, tomato salad (with cukes, or peas, or whatever), tomato stews, tomato rice casserole, stuffed tomatos, sliced and spiced tomatoes. Also we just keep them handy in the fruit bowl for snacking! If you or your husband have an office - take them to the lunch room and share (you'll be very popular). I've also heard they can be frozen but I've never tried that.
Now, I have a hint for you - canning isn't as time consuming as you think especially thanks to tomato's high acid content. If you want to make sauce, have your partner or a friend help you prepare it and cook it down. You can walk in the kitchen with both children in tow and stir it periodically. Then it's ten minutes in a hot water bath to seal! I have three children and can all the time - and think you may be looking at recipes that are more complex than they need to be. Take a pre-made pie crust, brush some olive oil on the bottom and sides, layer tomatoes, mozzarella cheese, fresh basil, salt, and pepper. Continue layering until ending w/a layer of mozzarella and basil. Sprinkle a little more olive oil on top. (I like extra virgin, it has more flavor). Bake at 350 degrees, for about 35 mins, or until done.
Also, tomato salad is good.
Mix tomato, olive oil, salt, pepper, and buffalo mozzarella. You can add red onion, fresh parsley if you like. Also add some balsamic vinegar if you like.
You can make spagetti sauce and freeze it.

Take an onion and chop off some million/4 of it. cube this up small and fry in olive oil. Chop the tomato and upload it to the pan with the onion. turn the warmth down low. upload approximately 2 tablespoons of cooked rice to the pan. upload salt, pepper and a few herbs. get rid of the pan from the warmth. Take the golf green paper, decrease it in 0.5, get rid of the seeds and wash it. Spoon the mixture from the pan into the golf green pepper. Wrap the crammed halves in foil and bake in a warm oven for quarter-hour. After quarter-hour, unwrap the pepper halves, positioned some grated cheese on authentic and positioned lower back interior the oven for 5 minutes. it rather is extremely sturdy with an component salad and french fries or an component salad and garlic bread.

Slice them up in rings. Spread a little butter on the base of a heatproof bowl. Lay them out. Scatter breadcrumbs over them season lightly and repeat the process till it gets to 3 1/4 full. sprinkle with more bread crumbs and some cheese and bake in a med hot oven for 30 minutes or till golden brown. Serve with a salad for a meatless supper or lunch or with a roast.

Down in Georgia, we fresh freeze them for later. Just chop up tomatos, onions & fresh garlic. Place in freezer bags for later use. I normally use them for spagetti, homemade veggie soup, chili,etc. during the winter months. Quick & easy way to preserve with 2 children to take care of as well.....

I generally freeze them.
just blanch in boiling water for 30 seconds to remove the skins,
then plunge into ice water. . bag & freeze.
They are the best!! Use in all your receipes when the fresh
tomatoes are not available.
This really is a quick process, you can do it while the kids, nap
or just get up / or stay up a little longer and get it done.
They are too good to waste!!

Salad
Mix cut tomatoes with Parseley, green onions, chives, cillentro, cucumbers and onions. Sprinkle sal, pepper and some garlic poweder on top then stir.

If you have an oven, dry them.
You can keep them under (olive) oil.
Is on low temp in the oven for a long time so in the meanwhile you just take care of the kids :)
