Passports are specific to your country.
I would assume that to get something called a "united nations" passport, you would have to be an envoy to the U.N. I'll look further...
Add: OK, more info. These are usually issued to stateless persons and person who have difficulty in getting their respective National passport.
However, they are largely a myth: a form of recognition of refugee status, not an effective travel document. Most countries are not keen to take refugees as tourists. The UN doesn't issue them. (How could it?) The country which recognises the refugee does that. As it sees fit.

There are some islands under the protection of UN like Svalbard, Jan Mayen and Åland. I think they have Norwegian and Finish passports, but why not a UN passport? A good question I haven't been thinking of that possibility.

there is no such thing as a UN passport, The United Nations has no authority to issue passports either
