This is a very simple recipe that does wonders for cooks, novice or professional. I've made this several times, and even catered a dinner with it:
Jim's Stuffed Chicken Breasts
4 skinless, boneless chicken breast halves
salt and pepper to taste
1 (15 ounce) container ricotta cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 clove garlic, minced
2 eggs, beaten
1 (8 ounce) package shredded mozzarella cheese
1 (8 ounce) package shredded pepperjack cheese
1 (16 ounce) jar spaghetti sauce
Preheat oven to 350 degrees F (175 degrees C).
Season chicken breasts with salt and pepper to taste. Slit open on the side for stuffing; set aside.
In a medium bowl, combine the ricotta, spinach, garlic, eggs and 1/2 of the pepperjack an 1/2 of the mozzarella cheeses. Mix well and stuff each breast with 1/4 of the mixture; secure with toothpicks and place stuffed breasts in a lightly greased 9x13 inch baking dish. Pour sauce over all and sprinkle with remaining cheeses.
Bake at 350 degrees F (175 degrees C) for 45 to 60 minutes, or until chicken is cooked through and juices run clear.
As a side dish, get some Italian green beans and put on the stove, and add some onion and white distilled vinegar. Maked a couple baked potatoes, and you are in BUSINESS!!!

this is very basic and simple(but I love it)
Materials:
Broad egg noodles
canned peas
white mushrooms
heavy cream or half and half(you can pick)
First, slice the mushrooms and saute them in the heavy cream/half and half. At the same time cook the noodle. When the noodles are done put them back in the pot. Then add the canned peas with a little bit of there juice and the mushrooms with the heavy cream/half and half. Toss it all together and you are done!

APPLEBEE’S BOURBON STREET STEAK
2 tenderloin steaks (1 1/2” thick)
2 T. bourbon
2 T. brown sugar
1/4 T. freshly ground black pepper
salt, to taste
Combine bourbon, brown sugar & pepper; rub over steaks. Preheat grill. Place steaks on grill & cook for 13 minutes (rare) to 17 minutes (medium), turning once. Season to taste with salt & serve. Makes 2 servings.
MAMMA MIA CHICKEN
2 chickens, cut up & skinned
1 c. lemon juice
1 onion, chopped
2 c. seasoned bread crumbs
2 tsp. cheese, grated
olive oil
parsley
black pepper, to taste
Place chicken pieces in a bowl with the lemon juice. In a medium brown paper bag, put in flavored breadcrumbs, grated cheese & parsley. Shake slightly to mix. Put 3 pieces of chicken into the bag at a time & shake to coat thoroughly.
Put the chicken pieces in a baking pan with the onion. Sprinkle with pepper & drizzle with a little olive oil. Bake at 350ï° for 1 hour. To serve, squeeze a little lemon juice over chicken & garnish with lemon slice, parsley, & a little grated cheese.

I have an idea.
Boneless breast chicken (season w/ adoba by Goya)
tenderize the chicken
bake it slowly to preserve the flavor & add water
peppers and onions hot peppers if you like them red for the color
Rice of your choice I prefer parboiled rice and i add my own ingredients like peppers onions and the orange adobo for the
color, and broccolli on the side

Keep it simple and serve him his favorite meat. To make it special just buy best quality and serve it with or in a special sauce and instead of potatoes try something different like couscous or in fajita wraps.

chicken alfredo with broccolli
cook peene pasta, add a jar of alfredo , add cooked chunk chicken and brocclli. serve with cheese garlic toast
or
cook hamburger meat, drain. add 1 block of velveeta mexican cheese,and a jar of medium salsa (we strain ours because we hate tomatoes) blend until all is melted. serve with Tostitos scoops!
