My friend made awesome chicken for me this summer when I was visiting. It was simple.
Spread a thin layer of dijon mustard over the chicken breast and let them sit for a bit.
While they are sitting, melt some butter (about 1/3 cup) and mix with a good teaspoon of garlic powder and a good teaspoon of tarragon and the juice from a 1/2 of a lemon.
She barbequed the chicken breasts slowly, basting them with the spiced butter.
It was awsome! I have done chicken like this also in a frying pan since I got her recipe, and also baked it using these same spices ina covered pan in the oven. (I guess if you are baking it, you can't baste as easily...I just put little dollops of butter on the chicken with the appropriate spices before baking)
Was good every time, reallly nice. Not sure it would be so great with gravy though, although that'd still be good for the potatoes.
Good luck!

One of the things I like to do with chicken breasts is first of all to remove all bones. Now make a pocket of the breast by inserting a very sharp knife and slicing along the length. I prepare some stuffing mix, line the opening in the breast with prosciutto or very thinly sliced ham, then fill the pocket with the stuffing and close it up with toothpicks. Then I grill the breasts on the barbecue. Add a couple of cobs of corn and you have a complete meal. I would think you could do this same thing and use the stuffed breasts in a casserole with creme of celery, mushroom, or chicken soups or a mixture of some of these. Top with additional dressing mix and bake.

Here's a nice recipe if you have the ingredients.
Mix two cups of sour cream, half a cup of cooking sherry, half a cup of chopped onion, half a cup of chopped mushroom, half teaspoon of tarragon, half teaspoon of mint. Half teaspoon ground fennel.
Slice the chicken breasts into strips. Cover them with the mixture in a casserole dish. Bake at 325 for about an hour and a half. It's my own recipe...but soooooo good!

I read that you are making a chicken gravy sauce for on top but my fave way to make breast is to pour mushroom soup over top and then add fresh mushrooms on top. I have also taken breasts and either pound them out to make them thin or just cut them open and stuff them with stuffing or dressing or whatever you call it and then put the mushroom sauce on top with the fresh mushrooms. Big hit with my family!

You should look on cooks.com for tons of awesome recipes. They are submitted by other people that go on the website, so they are usually very easy to do and delicous. Also, cooking chicken in the crockpot is very tasty, if you have one. If you don't have one you should get one- they are great.
