I've always used either lard or crisco, they both work very well. When frying chicken, really the secret is the spices you use on the meat and in the coating, the frying is just in order to crisp the coating. Always make sure that you cook only a few pieces at a time, otherwise you lower the oil temperature, which can make the chicken absorb the oil instead of crisping the outside properly.

The reason most people use a solid type of fat(crisco or lard) is because you can get it to a higher heat and fry the coating more crisply(which IS the point afterall)
Olive or butter burn at lower temperatures(butter lower than olive oils due to milk solids) and vegetable oil(the lighter it appears the hotter the temp can be achieved before it burns) will get hotter just not AS hot as a solid... I actually crisp it in hot crisco and then bake it on a rack in a pan in the oven that way getting both the desired crispness of frying and losing the fat achieved by elevated baking...

I've fried with all types of oils and have found that for taste, a crispy outside, and juicier chicken lard was best. Clean the chicken and place flour and seasoning in a bag(whatever you like) shake and fry in the lard. Low heat to cook the chicken all the way through then place on a paper towel to drain extra oil.

I have found as well as heard from a popular southern chef that peanut oil renders the best flavor without being extremely heavy. Go for the peanut oil.

shortening makes the crispiest chicken in my opinion. Best to use Crisco. I've always had the best results with it.

I think olive oil adds a better flavor and as far as oil goes, it's a little better for you.
