The perfect summer dessert:
Fruit Pizza
"A cookie dough crust, cream cheese filling, and fruit topping. Tip: For a quick crust, use one package of ready made sugar cookie dough rolled out to fit a pizza pan. Use an assortment of fresh fruit such as bananas, peaches, blueberries, kiwi, pineapple, and strawberries."

INGREDIENTS:
1/2 cup butter, softened
3/4 cup white sugar
1 egg
1 1/4 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 (8 ounce) package cream cheese
1/2 cup white sugar
2 teaspoons vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees
In a large bowl, cream together the butter and 3/4 cup sugar until smooth. Mix in egg. combine the flour, cream of tartar, baking soda and salt; stir into the creamed mixture until just blended. Press dough into an ungreased pizza pan.
Bake in preheated oven for 8 to 10 minutes, or until lightly browned. Cool.
In a large bowl, beat cream cheese with 1/2 cup sugar and vanilla until light. Spread on cooled crust.
Arrange desired fruit on top of filling, and chill.
I make it every summer. it's super easy and YUMMY!

Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Crock Pot Enchiladas
Serves 6
1 lb Ground Beef, lean
1 (8.5 oz) White Onion, chopped
1 (4 oz can) Chopped Green Chilies
1 (14 oz can) Enchilada Sauce
1 (10-3/4 oz can) Golden Mushroom Soup
1 (10-3/4 oz can) Cheddar Cheese Soup
1 (10-3/4 oz can) Cream of Mushroom Soup
1 (10-3/4 oz can) Cream of Celery Soup
Instructions:
Brown hamburger and chopped onion and pour off grease.
Put all ingredients in crock pot. Mix and cook low 4-6 hours or on high for 2-3 hours.

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 boneless, skinless chicken or turkey breasts
1 large, fresh cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Cube chicken and add to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Return chicken to skillet. Stir in sour cream. Serve over rice, pasta or mashed potatoes.

Beef Taco Skillet

1 pound ground beef
1 can cambell's Tomamtoe soup
1 cup pace chunky salsa
1/2 cup water
8 flour or corn tortillas,cut into 1-inch pieces
1 cup shredded cheddar cheese
Cook beef in skillet until browned.Pour off fat.
Add soup,salsa,water,tortillas and half the cheese.Heat to a boil.
Cover and cook over low heat 5 minutes or until hot.
Top with remaining cheese.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

Try this :
Hamburger steak with gravy.
Brown your seasoned hamburger patties, when almost done; add sliced onions. when onions are cooked; drain grease out of pan.
In a small bowel: blend 3 tbs. of corn starch with 1 1/2 cups of water. season with salt and pepper. Add to hamburger steaks and onions. Cook on med. heat until gravy thickens, then turn it down to simmer until you are ready to eat!

COUNTRY MEATLOAF
This is a homey version of meatloaf. The onions & bell peppers are not precooked, so they add a nice crunch to the great flavor.
1 1/2 c. onion, chopped
1 c. bell pepper, chopped
3 T. dried parsley
1 tsp. black pepper
1 1/2 tsp. salt
2 cloves garlic, minced
2 eggs, lightly beaten
20 or so squares of saltines, crumbled
2 1/2 to 3# ground chuck or gr. round
2/3 c. catsup, + extra for topping
1 c. mozzarella or provolone cheese, shredded
Preheat oven to 350 degrees F. Crush dried parsley before adding to this mixture. Combine all ingredients in a large bowl, & mix well. Spray loaf pan or 9x13” baking dish with oil. Place meat mixture into prepared pan, & cover with foil. (NOTE: if you use the 9x13” baking dish, then shape meat into a loaf & place in center of dish. I like using the baking dish instead of a loaf pan, because the grease seems to drain away from the meat instead of baking into it.) Bake for about 1 hr. 15 min. Remove from oven & remove foil. Cover top of meat loaf with catsup, & place back into oven uncovered & bake for another 15 to 20 minutes, until done. Remove from oven, drain off excess grease, & let stand in pan for 10 minutes. Slice & serve hot, warm or cold.

DONNA'S CORNBREAD SURPRISE
(This is my own creation of 35+ years, & a much asked for favorite!)
3 lb. ground chuck
1 lg. onion, chopped
1 sm. bottle barbecue sauce
salt & pepper, to taste
8 to 10 slices American cheese
2 boxes Jiffy Cornbread Mix
2 eggs
1/2 c. milk
Brown ground chuck & onion in skillet, add barbecue sauce, salt & pepper, & simmer for about 5 minutes. Spoon meat mixture into 9x13” pan. Layer with cheese. Mix cornbread mix according to directions, & spoon over the top of the cheese. Place in oven & bake according to cornbread directions on box. Cool for 10 minutes, cut into squares, & serve with mashed potatoes & tossed salad.
Note: This recipe was created out of necessity one night when we returned home empty handed from a fishing trip. Our small town, at that time, rolled up the sidewalks at 5 p.m., so the grocery store was closed. There wasn't much in the fridge, & I had to fix supper for my husband, myself, & our 4 (at the time) grade-school age children.. They all had extremely healthy appetite, to say the least, so they weren’t being very patient. I scrounged up the above ingredients from the fridge & pantry, & a recipe developed that my family (& others) frequently requested. Great to take to church suppers, picnics, etc. Also, good cold. What more can you ask of a recipe?!

chicken or pork pot pie... pie crust,veggies of choice,boullion cornstarch, make your sauce with 1 cup water 2tsp of boullion and 1tsp cornstarch heat slowly in sauce pan, brown meat with seasoning of your choice ..add you cooked meat and veggies to pie crust than pour thickened sauce over top place another pie crust over top pierce several times with fork and bake @ 375 for about 15-20 min DEEEElicious
