A good recipe for a basic omlette for one of more people is:
Ingredients
3 eggs
salt
pepper
ham, chopped
cheese, grated fine
Preparation
I use a non-stick frying pan.
Coat with a cooking spray or a little oil (just enough to coat pan).
Beat eggs lightly (just until fluffy) and salt and pepper (or other spices).heat pan over medium heat until it starts to smoke just a little.
Pour eggs in and swirl to coat pan.
Let the bottom cook for about 2 to 4 minutes and top with ham and cheese.
As it cooks on the bottom take a fork and poke holes in egg to let the raw parts get to the bottom.
When cheese starts to melt take a plastic spatula and gently run it around the edges and work slowly underneath 1/2 of the omelet and gently turn it over.
I like to sprinkle the top with more cheese and let this melt a little.
Gently slide out of the pan and onto your plate.

ok there are different ways you can make an omelette with no fillings or fillings..
i help you best as possible.
to make a simple omelette
you use a small frying pan and heat the oil on low heat to sizzling the oil content has to be 1 and half tablespoons as you dont want it oily..
the you break 1 or 2 eggs depending how thick you want it into a small cereal bowl and beat the egg to in one consistency you can if you want add a little salt..
then you add the mixture to the pan and watch it have a white layer on the outside then you a fork or spatula and turn the omelette over so the other side can cook the omelette should be a golden brown b4 eating.
to add fillings you can grate some cheese or add ham or wotever but it must be in the mixture b4 cooking then just add the whole thing in.

Bacon, Mushroom, and Cheese Omelet
Serves 1
3/4 Cup Eggbeaters
1-1/2 Tbsp Unsalted Butter
3 Strips Crisply Fried Bacon
1 (4 oz can) Sliced Mushrooms, drained
1/4 Cup Mozzarella Cheese, grated
1 Scallion, sliced thin, for garnish
Instructions:
In a large nonstick frying pan melt the butter over medium-high heat. Add the eggs and scramble slightly. Allow the eggs to coat the pan and cook evenly. Crumble the bacon into the eggs, add the mushrooms and cheese, and cook for 1 minute.
Carefully slide 1 end of the omelet onto a plate while folding the other end over on top, like a taco. Garnish with scallions and serve immediately.

For a large Cheese omlette:
Step1: Put the pan on the stove and turn the heat to medium. Do not put anything in it yet.
Step 2: Beat 2 eggs in a bowl until competly mixed. ( You can add milk if you want, it just makes it a bit creamier) Add seasonsings to taste if wanted. I like salt, pepper, garlic and paprika.
Then grate some cheese. About a cup to a cup and a half.
Step 3: Put sponful of margarine in or 1 tablespoon of Stick butter in the pan. Move the butter around to cover the bottom of the pan.
Step 5: Poor the eggs into the pan and do not stir! Wait about two minutes. Then move your spatula all the way around the udges and flip it over in the pan.
Step 6: Wait about 30seconds then spread the cheese on about half of the omlette and the fold the other half over that.
Step 7: Wait about a minute more then take it out and put it on a plate. Then add salsa over the top if you want. And Eat.
P.S. If you want to add veggies or meat just add them instead of or as well as the cheese. I recomend sauteing the veggies first before putting them in the omlette. And you need to cook the meat first too.

Onion, Tuna, and Tomato Omelette
2 tbsps olive oil
1 medium onion, thinly sliced
1 small ripe tomato, chopped
½ a 7oz can tuna, drained and flaked
salt and pepper
2 eggs
Heat 1 tbsp of the oil in a medium skillet and saute the onion very slowly, covered, until it is tender but not brown.
Add the tomato and cook for 10 minutes more, uncovered.
Beat the eggs in a bowl. Add the tuna, seasoning and the onion and tomato mixture. Mix well.
Wipe out the skillet. Heat the remaining 1 tbsp of the oil and when very hot, pour in the egg mixture.
Lower the heat slightly and cook until the omelette is brown underneath, shaking the pan constantly. Flip to the other side, adding more oil if needed. Cook until set but still juicy within.

depending on the omelette you want to make try this spanish omelette that my twins love......
i crack 4 eggs into a bowl and whisk with a little water not much ( i use water because the eggs will become fluffy and not condensed if you use milk) mix together then put into a frying pan with a little butter or spam (your preference) put the heat on low to med. and keep checking your egg, when the batter gets half cooked filp your omelette over and add your mixture of (your choice)and continue to cook then cover the mixture you just added with the egg by flipping half the egg over the mixture, then cook for a few moments longer and your omelette is ready enjoy
in a seperate bowl i chop up green onion, ham, green pepper, tomatoe and add as mixture......some use all ready made salsa......
you can use cheese, or just tomatoe and onion, whatever your taste buds wants you can add it in when you flip your egg omelette over

Take about 3 eggs, and crack them in to a bowl, put the egg shells in the bin. The take out a frying pan and put it on a low heat on the cooker and add about half a teaspoon of oil. and let it heat up, while that is doing so. Get a Fork and beat the eggs until all yellow and bubbley, then add the eggs to the frying pan until the egg is completely cooker (I.e. no runny bits of egg anywhere). When cooker, turn off the heat, and take the omlette put of the frying pan with a spoon, but it on a plate, add some salt and/or pepper and then enjoy...

Beat together eggs and a little milk. Add salt and pepper. Lightly oil a frying pan with butter or oil, add egg and milk mixture, cook on a low heat for a few minutes then add your filling, cheese, ham, mushrooms,tomatoes or what ever your preference. cook for a few more minutes and then fold in half in the pan, cook for some more then turn over. Items needed: For each omelet: 3 eggs (just 2 eggs for a smaller omelet), 1 tablespoon milk, 1/4 cup shredded cheese, butter.
Mix eggs & milk with a fork until blended. In a non-stick omelet pan melt 1 tablespoon butter over medium-high heat, when butter stops foaming pour in eggs, swirling around pan to distribute evenly. Cook, lifting sides of omelet to let uncooked egg flow underneath, until almost set (about 1 minute), quickly sprinkle cheese over half of omelet. Fold plain side of omelet over cheese and cook for an additional 20 seconds. Serve at once. Salt & pepper to taste.

This ones easy to make I like cheese in mine but you can add what ever you prefer to this recipe
2 eggs
2 tablespoons cheese, grated
salt and pepper
1 tablespoon butter
Whisk the eggs till light and fluffy.
Add cheese, salt and pepper.
Mix well.
Heat a 7 inch non-stick skillet and add butter.
As the butter begins to smoke, lower heat and pour the beaten egg mixture.
Cook covered for a minute.
Fold over and serve immediately.
