(Why is music considered the universal language?)

because it's about the music...not about the words. You can listen to a song and know that it's tragic or about love...it doesn't matter what language the words are sung in.

It is easy to understand what a skilled composer is trying to communicate no matter what language you speak.

Because it is the only art that is always found in every culture, no matter how primitive that culture is technologically. Anthropologists have discovered cultures that do not have some of the other arts, but they have never found one that did not have music in some form.
