I have bought white rice, and burger but wondered what would spice it up. Any ideas?

This was my mother's recipe:

STUFFED BELL PEPPERS

6 to 8 bell peppers
2 T. butter
1 small onion, chopped fine
1 lb. ground chuck
1/2 c. canned diced tomatoes, drain
1 c. rice, cooked
& reserve juice
salt & pepper, to taste

If the peppers are small, leave them whole & cut off a slice from the stem end. Cut large peppers in half lengthwise. Remove the seeds & white membrane, & discard. Cook peppers in salted boiling water 5 minutes, invert & drain thoroughly. Cool. Place in shallow baking dish & set aside. Mix rest of ingredients & generously fill bell peppers. Top all with the reserved tomato juice. Bake at 350 degrees F. for 35 to 45 minutes. Serves 6.

Stuffed Peppers

6 large bell peppers
1 lb lean ground beef
1/2 chopped onion
1 (16 ounce) can tomatoes, cut up
1/2 cup long grain rice
1/2 cup water
1 teaspoon salt
1 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese

Cut tops from peppers.
Discard seeds and membranes.
Chop enough of the tops to make 1/4 cup.
Set aside.
Cook the whole bell peppers in salted boiling water for 5 minutes.
Invert and drain well.
Sprinkle insides of peppers lightly with salt.
In a skillet, cook the ground beef, onion and the chopped bell peppers until meat is browned and veggies are tender.
Drain off any fat.
Add undrained tomatoes, uncooked rice, water, salt, worcestershire and a dash of pepper.
Bring to boil.
Reduce heat, cover and simmer for 15 to 18 minutes or until rice is tender.
Stir in cheese.
Stuff peppers with the meat mixture.
Place in a baking dish.
Spoon any remaining meat around and in between the peppers.
Cover and bake in a 350 degree oven for 30 to 35 minutes.

Even easier..
1 package lipton spanish rice (make it up according to package directions)
1 pound hamburger
6 med-large green bell peppers (cut off tops,take off stem so you have a donut looking top) and clean out the seeds.
1 large jar of pasta sauce and 1 can tomato soup, mixed together (do not add water or milk!!)

Put the uncooked hamburger into large bowl and add made up and slightly cooled rice.. mix well.
Put enough mixture into peppers (right to the brim) and put tops on.
Place peppers into deep baking dish (somthing with high sides).
Pour sauce/soup mixture over top, so that it comes roughly 1/2 way up the sides.
Cover tightly with foil and bake @ 350 degree oven for an hour or so.

For low fat dont use any meat, fry some garlic and onions in a little olive oil (which is good for you), then add chopped tomatoes, salt, pepper, sugar and herbs such as oregano and rosemary and simmer until the water has gone and it is a thick paste. Then make some cous cous, which has hardly any fat at all and is very delicious! Put a layer of cous cous then a layer if your tomatoe sauce then a layer of low fat cheese and repeat until the peper is full and put in the oven at around 200 ºC. there is no need to pre cook the pepers. A nice light side salad with balsamic vinager dressing goes really well as a side. x

SPICY STUFFED PEPPERS
INGREDIENTS
4 medium green, red, or yellow sweet peppers
2 tablespoons water
¾ pound lean ground pork or beef
½ cup finely chopped onion
½ cup finely chopped carrot
1 clove garlic, minced
1 8-ounce can tomato sauce
½ cup cooked rice
¼ cup raisins
1 teaspoon chili powder
¼ teaspoon salt
1/8 teaspoon ground allspice
Few dashes bottled hot pepper sauce


DIRECTIONS
Cut tops from peppers; discard seeds and membranes. Chop enough of the tops to make ½ cup; set aside.

Place peppers, cut side up, in an 8x8x2-inch baking dish. Add the water and cover with vented clear plastic wrap. Cook on 100% power (high) for 3 to 5 minutes (5 to 7 minutes in low-wattage ovens) or till peppers are barely tender, giving dish a half-turn once. Drain and set aside.

Crumble meat into a 2-quart casserole. Stir in the ½ cup chopped green pepper, chopped onion, chopped carrot, and garlic. Cook, covered, on high for 5 to 6 minutes (8 to 9 minutes in low-wattage ovens) or till meat is no longer pink, stirring once. Drain off fat.

Stir in tomato sauce, rice, raisins, chili powder, salt, allspice, and hot pepper sauce. Spoon meat mixture into pepper shells. Cover with vented clear plastic wrap.

Cook on high for 4 to 5 minutes (5 to 7 minutes in low-wattage ovens) or till filling is hot and peppers are crisp-tender, giving dish a quarter-turn after 2 minutes.

Makes 4 servings.

add 1/4 roll of your favorite sausage for each lb of hamburger and add minced onions,garlic,worcestershire sauce,parsley and salt and pepper to taste.For a bit of kick you can finely chop a bit of jalapeno pepper and mix into the meat.

Seasonings! Cook the rice & burger as you normally do. I add chopped onion and tomato and top with a slice of cheese which I cut into two pieces and cross.

YOU NEED TO ADD ROTEL TOMATOES. THEY COME IN DIFFERENT LEVELS OF SPICE. ADD EGG AND ONION. THAT SHOULD DO THE TRICK. GOOD LUCK.
