I love lamb and Chicken in these types of marinade. I also add lemon as well. With the lamb mint is classic and goes very well.

pork tenderloin is great for this - put a few lemons in as well.
cube it, marinade it and throw it on skewers with peppers & onion. bbq.

I would say chicken. Also cut up some onions and put it in with the marinating meat

anything would go with that, you could even marinate some veggies it that. just don't marinate veggies and meat in the same container.
