it had either too much air from rising to long or something else or to much yeast

Sounds like a big air bubble got stuck in the middle...it will still taste delicious, I'm sure! ☺ Just knead it better next time. Maybe invest in a bread making machine, if you don't already have one -- you can get one for around $40, and they save a lot of time and work.

Sounds like the dough was slightly dry when you rolled it and it didn't join at the wrap.

that's why I don;t make my own...my few forays into bread making, that is what happened and peanut butter scmooozzes out everywhere!!
