Sausage and Mash with Ham and Cheese
3 medium potatoes, peeled
milk
2 teaspoons butter (a knob)
2 sausages
2 slices ham or cooked bacon
2 ounces grated cheese, plus extra for the top
1/2 onion
Chop the potatoes into even-sized pieces and put in a saucepan of boiling water to boil for about 15- 20 mins.
While potatoes are boiling, part cook the sausages (grill or fry) and chop into 1/2 inch long pieces.
Chop the ham into 1 inch squares.
Chop and fry the onion.
When the potatoes are fully cooked, drain them and return them to the saucepan.
Mash with the butter.
Add milk until you have a smooth mixture.
The mashed potato should look smooth, but not move when you tip the bowl.
Add the cheese, onion and any seasonings (salt, pepper, mustard, cayenne pepper, etc) at this point.
Place a layer of mashed potato in the bottom of a greased oven bowl.
Add the sausage and ham.
Layer the rest of the potato on top.
Grate more cheese over the top.
Cook in the centre of the oven, gas mark 5, 190 deg C for about 3/4 of an hour.
Check after 1/2 an hour!

sausage casserole
INGREDIENTS:
1 pound sausage
6 slices toast, cubed
1/2 pound cheddar cheese
1 teaspoon dry mustard
1/2 teaspoon salt
4 eggs, beaten
2 cups milk
PREPARATION:
Crumble and cook sausage over medium heat; drain.
Mix remaining ingredients with sausage; pour into a greased, 9x13 baking dish, and refrigerate overnight.
Cover and bake at 350 degrees for 45 to 60 minutes.
Uncover, reduce temperature to 325 degrees F .
Bake for about 30 minutes,
SERVE WITH CHAMP ( we eat this in northern ireland ) but if you dont fancy it have plain mashed potatoes
5 fluid ounces milk
10 spring onions, chopped and cooked in the milk
salt and pepper
1 1/2 lbs freshly cooked hot mashed potatoes
4 tablespoons melted butter
Cook the chopped spring onions, green part as well as white, in the milk; drain, but reserve the milk.
Season the mashed potatoes to taste, and then add the spring onions.
Beat well together and add enough hot milk to make the dish creamy and smooth.
Put onto 4 individual plates, make a well in the centre of each portion and pour a tablespoon (or more) of melted butter into each.
The dry potato is dipped into the well of butter when eating.

I dont like sausages but the exception has to be sausage casserole. The sausages taste so tender and full of flavour, if he loves sausages he will love this. All you need are fresh sausages, 1 white onion, about 7 mushrooms and a sausage casserole mix - schwartz do a good one, so do colemans.
Follow the instuctions on the packet - it's that easy lol
I usually add a chopped red chilli to the mix and a couple of cloves of garlic but you dont have to. I serve the casserole with oven baked potatoes. Drizzle the potatoes with olive oil before putting them in the oven and sprinkle with salt and pepper. Serve with the veg of your choice!

changing it might upset him if its sausage and mash keep it at that ,unless he will be happy you messing with it go ahead lol.
How about buying the best sausage you can fresh from a butchers and make a lovely mash using butter and some milk and getting the ice cream scoop to put it out in balls instead of sloped on plate and have a variety of vegetable in a nice dish on table to help your self .
For the sausage you could make a gravy and add onions put in a jug so you can pour onto sausages and potatoes.
in fact why not buy different sausages and try them pork and apple ,beef,chilli etc could be interesting and get you trying new flavours.(infact make sure you have made one he likes and in a basket have different flavours with cocktail sticks and he has to guess what the sausage is of course you need to remember)
I only say don't change the meal because my son Love's macaroni cheese with bacon and onion its his favourite he wouldn't be happy if i made something different but it still had macaroni .

I make chili sausages, chop onions and peppers and garlic and fry lightly, add the sausages and brown all over, add some fresh or dried chili to taste and then add one tin of chopped tomatoes, fill the empty tin with water and add that then crumble in a stock cube (I use chicken or veg), leave to simmer for around 25 minutes or so. Serve with mash, pasta or rice and have some soured cream and grated cheese on the side, yum yum.

Try one of the flavoured sausages instead of the usual pork or beef varieties.
You could just slice them up, and make them into mini kebabs with peppers, onions and tomatoes, and grill them or bake in oven
Put on a bed of wild rice with a sauce ( Not tomato ketchup or HP though)

I get a packet sauce for sausage casserole. I think it might be a Colemans one. You add onions and mushrooms. It is really easy to cook, and we all love it in my house, especially with mash!

chop an onion, fry with the sausage, add a bit of garlic, ginger and chilli, plenty of soy sauce, one beef oxo when sausages are cooked, add a little water, simmer for 2 minutes, pour on a tin of beans. f*cking delicous. chopped peppers go well too.
