Incredible Peach Upside Down Cake
TOPPING
1/2 cup sugar
1 tablespoon butter
1 tablespoon lemon juice
2 tablespoons peach schnapps or peach nectar
4 large ripe peaches, pitted, peeled, cut into 1 inch thick wedges (about 1 1/2 lb)
CAKE
1 cup cake flour, plus
2 tablespoons cake flour (not self-rising)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/3 cup sugar
2 tablespoons butter, softened
1 large egg
1 teaspoon vanilla extract
1/4 teaspoon almond extract
2/3 cup buttermilk
Topping:.
In a 9 1/2 or 10 inch nonstick oven-proof skillet, mix sugar and 3 tsp water. Boil, swirling pan, about 5 minutes until sugar starts to caramelize and tuns a light honey color. Remove from heat; stir in butter, lemon juice and scnapps until blended. Cool slightly, then arrange peach slices in caramel, overlapping to fit. Heat oven to 350°F
Cake:.
Whisk flour, baking powder, baking soda and spices in small bowl to blend. In medium bowl, with a handheld mixer on medium speed, beat sugar, butter, egg and extracts 3 minutes, or until pale and smooth. On low speed, alternately beat in flour mixture and buttermilk until just blended. Spoon over peaches; spread evenly to edges.
Bake 35-40 minutes until a wooden pick inserted in center of cake comes out clean. Cool in skillet on a wire rack 5 minutes. Run a thin knife around edges of cake to loosen; invert onto serving plate (if any peach slices stick to skillet, replace on top of cake). Serve cake warm or at room temperature.

Peach Upside Down Cake
1/4 cup butter
2/3 cup packed brown sugar
2 cups sliced, peeled fresh peaches
1/2 cup chopped pecans
4 eggs, separated
1 tsp vanilla
1 cup granulated sugar
2 tbsp butter, melted and cooled
1 cup sifted cake flour
1 tsp baking powder
whipped topping, if desired
Preheat oven to 325 F. In a 10-inch nonstick ovenproof skillet, melt 1/4 cup
butter. Remove from the heat. Stir in the brown sugar. Spread evenly.
Arrange the peaches on the sugar mixture. Sprinkle with the nuts. In a large
bowl, combine the egg whites and the vanilla. Beat with an electric mixer on
medium speed until soft peaks form. Slowly add the granulated sugar, beating
until stiff peaks form. Combine the egg yolks and 2 tablespoons of butter.
Stir into the egg white mixture. Sift together the flour, baking powder, and
1/4 teaspoon salt. Sprinkle about one-fourth of the flour mixture at a time
over the egg mixture. Gently stir by hand. Carefully spread the mixture over
the peaches. Bake for 40 to 45 minutes or until a toothpick inserted into the
center comes out clean. Cool in the pan on a wire rack for 10 minutes. Loosen
the edge; carefully invert the skillet over a serving plate. Remove the
skillet. Serve the cake warm. If desired, top with
whipped cream. Yield: 10 servings

I just use a duncan hines yellow cake mix and in the bottom of the cake pan I pour 1/2 stick of melted butter and add 1 cup of dark brown sugar crumbled. Then arrange the sliced peaches on top of the sugar and pour the mixed up cake mix over the peaches. Bake to the cake box instructions until a inserted toothpick in the center comes out clean.
