Take a head of fresh cabbage, shred it finely in a food processer. Dump in a large bowl, shredd carrots add them to the cabbage, add mayo as much as you want to your taste, salt and pepper. Sitr well and let set for 1-2 hours in the fridge. There you have fresh homemade coleslaw.

The simple, classic, yet tasty coleslaw is a mixture of Cabbage or Sauerkraut, carrots (or parsnips) and onion, mixed with either spiced yogurt or mayonnaise (mayo is easier) to make it extra crisp and fresh tasting, keep the vegetables in the fridge and add the mayo just before serving. Top with a pinch of salt and about 2-3 pinches of pepper.
