For instance, if your spine is dislocated in different ways could that affect your memory etc?

Maybe not directly, but certainly indirectly. Subluxations (named by you "dislocations") can cause pain and poor circulation, which mentally and physically fatigue us, which in turn makes it harder to remember small details - the worse the pain, the more you tend to forget, just because dealing with the pain saps your energy. As for "etc.", well, this same idea can be reapplied to other things too. For example, I know from experience that when a certain vertebrae in my neck is "out" too far, I will start experiencing migraine symptoms.

Even though Spinal cord and Brain are both in nervous system, it doesn't mean when you dislocated your spine it will alter your memory. Only the brain have the cells to in store memory spinal cord don't have that. In spinal cord injury the level below the injured area will only be affected.

You think with your Brain not with Spinal Cord.

It can, it depends on where the injury is located on the Spine. It's not so much the spine, as the spinal cord that runs into your brain. The cord is protected by your vertebre (spine).
