Ok, a few thoughts. First, I hate the table idea. Some people would have their back to you if they're seated at a table. Better to set up the tables near by and just move the chairs over after the ceremony. Next, I understand what you're trying to do with the balloon bouquets, but loose balloons are really bad for the environment. They have to come down eventually and critters like to eat them and then they run into trouble. Alot of people nowadays are having a wishing well. Guests make a wish on a penny and toss it into a fountain. Same general idea, better on the environment. And the only problem with fish is that their living creatures. What if nobody wants one?

It is fine to have the guests sitting at their tables and you to walk through them as your aisle, that's actually kind of nice but I would think you should have the head table set up where the cereomony took place (it will be considered the front anyway) and that should be done AFTER the ceremony. Find a couple of people (who's serving the food??) to set up the table while you and your new husband mingle or get pictures or whatever you are doing for a few minutes...
I do not like the goldfish idea...who wants a goldfish? What if they die while your guests are eating or before?? That is also a lot of work getting their bowls to the right temperature, the fish adjusted etc. just to ensure they don't die that same day...how about tying the balloons to a planter? Someone can keep the plant.

There are a couple of ways to handle the seating arrangements. Having people sit at tables during the ceremony is fine, people can turn their chairs around watch the ceremony, but you may want to consider putting a row of chairs for your parents and other close relatives or you can do rows of chairs and have the tables set, moved out to the perimeter, and ready to place after the ceremony is over, if there is enough room at your venue. The head table placement is really up to the space that you have.
As far as live fish are concerned, not necessarily the best idea. I've had people use them for a couple types of events and it just wasn't pretty. One used Japanese Fighting Fish, which, after a few "beverages" people started putting together in bowls and letting them fight. Others have used goldfish and believe me, if they die, it doesn't create the classy, romantic atmosphere you may be going for for your wedding celebration.
I, personally, am not a big fan of balloons at weddings, either (think birthdays or prom!) however, if that's really what you want, balloon bouquets around the area are probably more effective and nicer than using balloons on the tables.

It would certainly be different to have fish, but that is a lot of effort and expense to buy the bowls, fish, set it up... You could just sprinkle rose petals across the table lengthways. I love the balloon bouquet idea!
As for the tables, why don't you just have two round tables or one rectangular table waiting out of sight close to the tent and then while the guests are forming a receiving line (most ministers/officiants love that) your ushers (or 2 groomsmen) could sneak off and set the table(s) up on the stage (or up front if you didn't have one) that way you're still front and center and surrounded by all the beautiful decorations.

Funny, we are having an outdoor/backyard wedding and that's exactly what we are doing with our chairs. We have about 45 people, round tables on either side of the aisle, where our guests will be seated during and after the wedding. We are getting married under a gazebo. After we are married we will mingle w/ guests while the appointed people will move our table and chair under the gazebo where we were married. We will be in view of all of our guests and provide us a beautiful shady place to relax and eat.
As far as the baloons they sound great but maybe tying them to a seperate table. (Taking them out of the fish bowls may get a little messy) Hope that helps and congrats!

Doesn't matter where the wedding party table is... there's no protocol to it, so put it wherever you think it'll work at your site. I'd recommend somewhere on the edge, though, because many of the folks sitting at will be standing up at the ceremony.
Re the fishbowls... fun idea, but do you think guests will actually want to take them home (and, you know, care for the goldfish?). If the answer is yes, then go for it.
We did our wedding reception somewhat untraditionally (though not as creative as these ideas), and the ideas that we had that people questioned early on, they all ended up liking when they were executed correctly. It's your party, you can do what you want to!

I think I'd leave the fish out... They could get hurt/die and dead fish floating in your centerpieces would be tacky to say the least. Besides, you may get stuck with the fish yourself at the end of the day, as many people wouldn't want to keep fish. Rose petals would be pretty though, and candles floating in bowls would be too. I hope everything goes well!
