I have made this for many whom have given it the title. This takes a bit of effort but is well worth it. Please note: for those who do not wish to use bacon, substitute 1/4 cup melted butter for the bacon grease and continue with the recipe. (I generally serve this soup as a special treat as it is not recommended for people counting calories.)"

INGREDIENTS:
1 pound bacon, chopped
2 stalks celery, diced
1 onion, chopped
3 cloves garlic, minced
8 potatoes, peeled and cubed
4 cups chicken stock, or enough to cover potatoes
3 tablespoons butter
1/4 cup all-purpose flour
1 cup heavy cream
1 teaspoon dried tarragon
3 teaspoons chopped fresh cilantro
salt and pepper to taste

DIRECTIONS:
In a Dutch oven, cook the bacon over medium heat until done. Remove bacon from pan, and set aside. Drain off all but 1/4 cup of the bacon grease.
In the bacon grease remaining in the pan, saute the celery and onion until onion begins to turn clear. Add the garlic, and continue cooking for 1 to 2 minutes. Add the cubed potatoes, and toss to coat. Saute for 3 to 4 minutes. Return the bacon to the pan, and add enough chicken stock to just cover the potatoes. Cover, and simmer until potatoes are tender.
In a separate pan, melt the butter over medium heat. Whisk in the flour. Cook stirring constantly, for 1 to 2 minutes. Whisk in the heavy cream, tarragon and cilantro. Bring the cream mixture to a boil, and cook, stirring constantly, until thickened. Stir the cream mixture into the potato mixture. Puree about 1/2 the soup, and return to the pan. Adjust seasonings to taste.

You can take a basic recipe for chicken vegetable soup and modify it several different ways to get variety. The basic soup has small chicken pieces (boil chicken pieces or whole chicken in seasoned water, let cool, then tear into small pieces or you can use canned chicken), chicken stock (canned chicken broth or the water the chicken was boiled in), carrots, celery, onions, garlic. For tortilla soup, add corn to the soup, then top with shredded jack cheese, tortilla chip strips, and avocado when serving. For chicken noodle soup, add egg noodles to the basic soup. For chicken and rice, add rice. For Italian chicken soup, add Italian seasoning or oregano, tomatos and/or tomato paste, and pasta. You can also add potatoes, beans (any kind of canned or cooked dried beans) or any other vegetable - use your imagination.
We sometimes take leftover chicken or browned ground beef and literally just add cans of whatever vegetables we have in the pantry along with some beef broth or chicken broth.

Easy Cheesy Potato Soup

2 Cans of Chicken Broth
1 Can of Evaporated Milk
1 Onion Diced
3 Cloves of Garlic, Minced
1 TBSP Garlic Powder
2 Cups of Frozen Shredded Potatoes
1 Cup of Cheese
½ Cup of Sour Cream
Salt, Pepper, and Garlic Salt to Taste

In a large pot, bring chicken broth and milk to a boil. Reduce heat and add onion, garlic, garlic powder, and frozen potatoes to your liquid. Simmer over low heat for twenty-five minutes. Stir in sour cream and cheese and cook until the cheese is melted. Season to taste before serving.

Makes 4 servings.

add carrots, onion and celery to your soup for great flavor. I take a whole chicken and add big cuts of those veg and let it simmer for a good 5 hours and I get a great chicken stock. From there you can make noodles or buy them and bout half an hour before you serve, take out the veg and chicken and add cut up pieces of chicken that has been quickly browned and bam! you have chicken noodle soup.

I got this from a weight watchers meeting.

Taco Soup

1lb hamburger meat
1 ranch packet
1 pkg of taco seasoning
1 onion
1 can of corn
1 can of ranch style beans
1 can of dark red kidney beans
1 can of light kidney beans
1 can of rotella diced tomatoes ( reg)
1 can of rotella diced tomatoes ( mexican)

When you cook the hamurger meat cook the onions with it, then add everything into a stock pot. Do not drain the cans of the water they make up the stock of the soup.

Lots of noodles/meat is the key. Just don't have too much water. Toss in carrots or something else to add more solidity, but try and not have lots of broth with only a bit of substance, good though broth may be.

Hearty Chicken Vegetable Soup

INGREDIENTS:
1 (10 ounce) package frozen diced carrots
9 ounces frozen green beans
1/4 cup water
2 (10.75 ounce) cans condensed cream of chicken soup
2 cups milk
1 cup cubed, cooked chicken meat
1/3 cup chopped green onions

DIRECTIONS:
Combine carrots, beans, and water in saucepan. Cook over medium heat 6 to 8 minutes.
Mix in cream of chicken soup, milk and chicken. Cook 4 to 5 minutes, or until heated through. Garnish individual servings with green onions.

both are roughly the same except when it comes to protein. MOST veggies include a respectable amount of protein; fruits does not.
