I smoked some ribs, sausage, chicken. But it all tasted like crap. I used mesquite with some lighter fluid to start the fire. I let it smoke for 6 hours but the meat tasted oversmoked and left a aftertaste. The meat was also not done. What did i do wrong?

You cooked it at too low temp and for too long.

too much lighter fluid perhaps and that liquid mesquite smoke isover rated , u probally did not season it and just allow the mesquite to be ur seasoning, did u open it to let some smoke out? did u check the meat flip it?

I have an electric water smoker and have also owned a charcoal model. Most charcoal smokers have a temperature gauge and must be monitored to make sure the temp is in the right range. You may have used too mush smoking wood. I like fruit wood with pork, but hickory in a pinch. I keep my selections to 2 types of meats. Did you read the manual that came with your smoker? I think you missed an important point of the smoking - to infuse flavour. What flavour do you think you would get from using lighter fluid? And if the product is oversmoked, either you left it too long or the mesquite is too strong.

I have smoked for years.

Perhaps you don't care for the mesquite flavoring. . .

Always marinate the meat, follow directions in your manual,
there are many different woods to use.

I really think the wood might be your problem.

next time try using cherry wood they sell it in Menard's... not as strong a flavor ...can the lighter fluid......get a boy scout to help you to get the fire going...
