It is grated and it is raw, I know this cause I love this and I eat it with my steak.

You do it up raw from the horseradish root you buy in the store. Cut the root into smaller pieces and toss into either a food processor or a blender and add some white vinegar to make it a creamy consistency and also some salt. The smell may be so overpowering you may have to leave the kitchen while the root is pureeing. When done, put in a closed jar and refrigerate. Of course you can always buy it at the store but it does not have anywhere near the strenghth of fresh. It certainly will clear your sinuses out and goes great with many dishes.

Yes. If it was bottled raw it would cintinue to ripen and then rot. The cooking to preseve stops the ripening process.

most canned products are heated to near boiling or higher as they are proccessed. I believe horseradish has hydrocloric acid added to it also, which probably "cooks' it also.

No, It's raw, I grow and make it all the time. you can only make it in the month's that end in er, like Sept,Nov.Dec.
