German Potato Salad! This was my aunt Edith's recipe and the recipe was a hit with everyone.
German Potato Salad
5 lbs. of red potatoes
5-6 slices of bacon, fried crisp,
4-5 green onions, chopped
parsley
salt and pepper, to taste
Boil potatoes in peeling until done. Cool. Slice in oblong slices. Crumble bacon into mixture, add green onions, and parsley. Add the salt and pepper to taste.
In saucepan, mix 1 cup water, 1/2 cup vegetable oil (preferbably Wesson oil or Crisco), and 1/2 cup white vinegar to 5 or 6 Beef Bouillon Cubes. Let this come to a full rolling boil to dissolve cubes. Pour over potato mixture.
(Tips): I use dried parsley flakes. Also I use 2 batches of the sauce mixture. It gives it more flavor. I just cut the 2nd batch in half. Instead of a cup of water, I use a half, 1/4 cup oil, and 1/4 cup vinegar.
I hope you try this and enjoy. I think you'll like it.
Let me know!

It is called pico de gallo, some people mistakenly call it salsa, which is different and is described above (and sounds de-lish)
10 Roma tomatoes, chopped medium fine
two bunches of green onions, chopped fine (our local store sells them in very small bunches)
one red onion, chopped fine in the food processor with:
four cloves garlic, sometimes more
four jalapeno peppers, seeded and chopped fine in the food processor
four serrano peppers, seeded and chopped fine in the food processor.
One bunch parsley and one bunch cilantro (or two bunches of cilantro if you like the taste that strong) chopped medium fine by hand or fine in the food processor.
The juice of four or five limes.
Two ounces (one quarter cup) Italian dressing
Salt to taste.
I don't use any canned or processed veggies in this one.
Use gloves for handling the peppers or and empty plastic bag, at least on the non-knife wielding hand, or you will know it later.
I like the chopping a little coarser than my husband. When he makes it, he does it all by food processor. Both taste fine.
YUM, get the thin tortilla chips and prepare to get your daily vitamin C dose!

My home made fresh salsa.
3 large cans diced tomatoes (drained) (or 5 tomatoes diced)
1 red onion finely chopped
1 small can chopped black olives
2-3 cloves chopped garlic
1 green pepper diced
1 yellow pepper diced
small bunch of cilantro chopped
2 T olive oil
juice from 1 lime
little salt and pepper
make sure you drain everything well then mix in a large bowl and put in fridge overnight. I put some in bags and freeze also. It's great with chips, on potatoes, on fish, chicken, eggs anything!!
