They are fresh elderberries. My mom made a dozen pies and we did jam (which is very seedy.) Are there any other ways to preserve them? Freezer space is very limited, besides then we'd just have a zillion FROZEN elderberries!

elderberry muffins

2/3 cup honey )
2 ½ tablespoons shortening ) cream together
3 cups flour )
2 tsp. baking powder ) sift together and set aside
pinch of salt )
1 egg - add to creamed mixture
1 cup milk - add to creamed mixture alternately with dry ingredients
1 cup elderberries - add to batter

Pour into greased muffin tins (yield 12 muffins), and bake in 350 degree oven approximately 20 minutes.


ELDERBERRY WINE (2)

10 lbs fresh, ripe elderberries
1-3/4 lbs finely granulated sugar
6 pints water
1 tsp acid blend
1 tsp yeast nutrient
1/2 tsp pectic enzyme
Montrachet wine yeast
Wash, destem and inspect the berries for ripeness and soundness. Put berries in a stainless steel or enameled pot with 3/4 pound of sugar and half the water. Slowly bring to boil while stirring occasionally and turn off heat. Cover and set aside to cool to room temperature. Strain berries over primary through a nylon straining bag and hang bag over primary to drip drain for two hours. Very gently press pulp to extract a little more juice, but do not overdo this. Stir in remaining sugar and dry ingredients (except yeast) and stir well to dissolve. Add enough water to bring to one gallon and add yeast. Cover primary and wait for active fermentation. Ferment 2 weeks and siphon off sediments into secondary. Top up and fit airlock. Ferment two months, rack, top up, and refit airlock. Repeat after additional two months. Stabilize, wait 10 days, rack, sweeten to taste, and bottle. Age one year before tasting.


Elderberry Catsup

2 qt Elderberries
Vinegar to cover
1 c Sugar
1 tb Allspice
1 tb Cloves
1/4 ts Cayenne pepper
1 ts Salt
1 ts Cinnamon

Cook elderberries in vinegar until berries burst. Put berries through a food press or sieve, add sugar, cinnamon, allspice, cloves and pepper. Simmer until thickens. Pour into sterilized jars and seal.

Elderberry jelly is fabulous and beloved by many. It has been our yearly tradition to make this jelly and give as Xmas presents. I have moved and dont know where the bushes are around here (Maine) and would gladly take all your elderberries. Make jelly, not jam. Elderberry wine is also a great way to use the berries. It makes a great wine and is good for stomach ailment.s I am so jealous. I am on Yahoo now trying to find a source for elderberries.

I have one word for you on this subject. WINE, think about it for a few minutes then find a recipe on the web somewhere.Okay so you know elderberry wine is delirious (delicious).

Try elderberry wine. It should keep for a while.

Elder berry wine or a nice syrup.

(Did you know you can use the flowers for syrup?? When you pick the flowers you won't have that much elder berries in autumn ;) )

make jams. if you dont like the seeds use a cheescloth to take them out. they make great jams/jellies.
