Spiral/Ribbon Fry Potato Cutters are used. It's a gadget where you put in the full potato and it comes out in the curly shapes. The cutter turns potatoes into platefuls of uniquely appetizing, fresh, thin spiral french fries or ribbon like fries.

Same way as regular except they have a special maching to cut the potatos into curley bits instead of sticks. It's just a gimmick. Fries are fries.

Are you old enough to remember those things called Tater Twisters? Look'em up online. The potato is poked onto a little rod and pressed tightly against a blade while it is twirled around. If you get good at it, you can one huge long curly fry with your own Tater Twister at home. I still have mine! :)

They use a tool (you can buy a home version) that twists through the potato and cuts two or more intertwined spirals of spud, which are then separated and fried.

Here's where you can get one!

Not sure, but my best guess is that maybe the potatoes are cut in a spiral, like around and around the potato rather then just straight through?
