i have a TON of cucumbers in my basment and if i dont use them soon they are going to rot. what are some fairly easy recipes, nothing with alot of canning, and if canning please explain.
can you blanch cucumbers?
i have already made sour cream cucumbers.
are there any relishes? please explain.
pickling? please explain. (something simple, not to fancy!)

"estella cucumber salad"

you need:
5 cucumbers, peeled and thinly sliced
1 red onion, thinly sliced
3/4 cup creamy salad dressing
salt and pepper to taste

DIRECTIONS:
In a large bowl, combine the cucumbers, onion, salad dressing and salt and pepper. Mix together and serve.

We are a fan of cucumbers and use them many different ways.

I make a cucumber and onion salad. Slice cucumbers thin, slice onions thin. Add 1 part water to 2 1/2 parts vinegar. Add 1/2 cup (or more) of sugar. Season with salt, pepper and dill. Let marinate over night.
These cucumbers can be kept refrigerated for 3 weeks.

Another use would be Iraeli Salad.
Dice 5 cucumbers. Dice 5 tomatoes. Add olive oil and mix together. Cut one lemon into quarters and squeeze each onto the salad. Season with salt and pepper.

I don't like to can, either. But if you like sweet pickles (bread & butter pickles), this recipe works quite well. You FREEZE the pickles! So easy!

Freezer Pickles

25 medium, unpeeled cucumbers
8-10 medium onions, sliced
1/2 cup salt
Ice water to cover
5 cups sugar
3 cups white vinegar (5% acidity)
2-3 cloves garlic, chopped (optional)

Slice cucumbers 1/8-inch thick. Combine cucumber
slices and onion slices. Cover with the salt, ice water and
place (covered) in the refrigerator for 48 hours. Mix
sugar, vinegar, and garlic and bring to a boil; cool. Drain
pickles very well. Loosely pack pickles into containers.
Pour sugar-vinegar solution over pickles, leaving 1-inch
headspace. Freeze immediately.

Try these!
Cucumber Ring with Chicken Filling
Yield: 6 servings

2 Cucumbers, peeled and finely grated
2 c Chicken stock
Salt and pepper
1 Small onion, finely grated
4 tb Lemon juice
1 tb Fresh parsley, chopped
1 tb Fresh tarragon, chopped or 1-1/2 tsp dried
3 tb Mediu,-dry sherry
2 tb Plus 1 tsp gelatin

Filling:
1 1/4 c Shredded chicken
1 c Chopped celery
1 Finely chopped scallion
2 tb Lemon juice
3 tb Mayonnaise
salt and pepper

In large bowl, thoroughly mix cucumber, onion, lemon juice, parsley and tarragon. Pour sherry into medium-size bowl, sprinkle in the gelatin, let soften for a few minutes. Bring stock to boil, pour over gelatin and stir until dissolved, then turn into cucumber mixture, mix thoroughly, season to taste, pour into 5 cup ring mold, chill until set. Prepare filling by combining all ingredients and mixing well. Turn cucumber mold out onto dish and fill center with chicken salad. Serve with rounds of toast or hot crunchy bread.

Cucumber Salsa
Serves 6 (Makes 3 Cups)

1 Cup Sour Cream
1 Cup Plain Yogurt
1/4 Cup Parsley, snipped
1/4 Cup Cilantro, snipped
1 Tsp Ground Cumin
1/2 Tsp Salt
2 Medium Cucumbers, peeled, seeded, diced

Instructions:
In a large bowl, combine all of the ingredients and mix until well blended.

Cover and refrigerate until chilled, about 2 hours.

Serve with assorted vegetable dippers.

My fave way to eat them is sprinkled w/ kosher salt, a little pepper, some EVOO and some red wine or balsamic vinegar. Straightforward adn simple

Dont' forget cucumber sandwiches! Take the party rye or pumpernickel bread (found in deli areas), cut into circles w/ cookie cutter, spread w/ Garden Veggie flavored cream cheese, adn top w/ a cuke slice and a slight sprinkle of dill. (skip the dill if you don't have any) Mmm good!


Tangy Cucumber Salad

2 small cucumbers thinly sliced
1 tsp salt, divided
1 med onion, chopped
2 med. tomatoes, chopped

1/4 cup cider vinegar
½ tsp ground mustard
1/4 tsp dried oregano
2 Tbs. oil
1 Tbs. honey
½ tsp celery salt
½ tsp dried basil
1/4 tsp garlic powder
dash cayenne pepper

Place cukes in strainer, sprinkle with 1/2 tsp salt and toss.
Let stand for 30 minutes.Rinse and drain well.

Place cukes in large bowl, add tomatoes and onions.

In a small bowl whisk together the remaining ingredients and pour over cucumbers and toss.

Cover and refrigerate for several hours.

Cucumber Party Canapes

Ingredients:
1 package (8 ounces) cream cheese, softened
1/4 cup sour cream
1 teaspoon dried dill weed
1 teaspoon lemon zest
1 cucumber
1 loaf Canape French Bread, sliced
1 cup cherry tomatoes, halved

Directions:
1. In Small Batter Bowl, combine cream cheese, sour cream, dill weed and lemon zest; mix well. Cut cucumber crosswise into 3 equal sections. Peel, seed and coarsely chop one cucumber section. Add to cream cheese mixture; mix gently. Cover and refrigerate until ready to use.

2. Thinly slice remaining cucumber sections using Ultimate Slice & Grate; cut each slice in half. Slice canape bread into eighteen 1/2-inch slices using Serrated Bread Knife.

3. To assemble canapes, place 1 scoop cream cheese mixture onto each bread slice using Small Scoop, spreading evenly. Top each canape with 1 cucumber slice and 1 tomato half. Serve immediately.

Yield: 18 canapes

Freezer Pickles

2 qt. cucumbers, sliced thin
1 onion
1 1/2 sugar
1/2 cup vinegar
2 Tbsp. salt

Mix cucumbers, onion and salt, let stand 2 hours. Stir once in a while. Rinse and drain. Add Sugar and Vinegar; stir to dissolve. Mix and put picles into freezer containers and freeze.

Bread and Butter Fridge Pickles

10 to 12 Cucumbers
4 cups vinegar
1/4 cup salt
1 1/3 Tbsp. celery seed
4 cups sugar
1 1/3 Tbsp. mustard seed
1 1/3 Tbsp. turmeric powder

Warm vinegar, sugar, salt, mustard seed, celery seed, and turmeric powder until sugar dissolves. Slice cucumbers and 2 onions (optional) in two gallon jar. Pour cooled mixture over cucumbers.

Quick Pickles

3 large cucumbers, cut into slices, 1 med. green pepper chopped, 1 med onion sliced.
1 Tablespoon salt
1 teaspoon celery seed
Mix all and leave for one hour.
Mix 3/4 cups sugar, and 1/2 cup lemon juice until sugar is dissolved.
Pour over vegetables, Cover and refridgerate 24 hours
Will keep for about three weeks.

Cucumber Relish

12 large cucumbers
4 large sweet onion
5 Tbsp. salt
2 cups sugar
3 qts. cider vinegar
1 cup water
2 tsp. celery seed
2 tsp. dry mustard
3 tsp. corn starch
1 tsp. ginger
2 tsp. turmeric
Peel cucumbers and onions and grind. Place in large bowl, sprinkle with salt. Cover and let stand 24 hours.
Place remaining ingredients in a large kettle and bring to a boil, stirring occasionally.
Drain cucumber mixture well, add to the boiling mixture-again bring to a boil-pack at once into large sterilized jars and seal.

I slice them very thin. Add a little sliced onion. I mix about 1 cup miracle whip with about a tsp sugar and a few drops of vinegar. Stir up and toss together and put in fridge over night. They are really good, and easy too!

What on earth were you doing with all those cucumbers!?

anyways, make salads amd sandwiches with them. Try juicing a few of them too.
