LEMON LIME GARLIC CHICKEN
We use Thighs Wing & or Cutlets (our favorites)
10 cloves of garlic grated
4 lemons juiced
4 limes "
or the lemon lime plastic look a likes from the grocery store
4 tbs of oil your preference (Olive oil for us) Not extra virgin it has a low smoking point
Clean chicken Skin it if you want, let marinate (not more than 8 hours for cutlets) & no more than 10 hours for other pieces with skin( covered in the fridgee turning once half way through if you can) (chicken begins to breakdown from the acid) Add salt and pepper on both sides right before you grill. Med. Low if the chicken has been removed from the fridg 1 hour before. If you have just removed the chicken from fridge and you are starving(ya no wat u r goin to hav 2 do is
wait even aaaalllooonger time) and your stomach says lets get on with the cooking deal. Well guess what you really have to take control CAUSE YOU ARE DOIN THE COOKIN RITE? If u just removed the chix from fridge it has to be cooked (SLOW SPEED Temp covered at least 20 min's per side (that's if you like it falling off the bone like we do), It Always depends on the size of the pieces. You can always check by cutting into A piece of Chix if it is pink any where KEEP COOKING (Pink is not the right color for chicken even if they think they like that color) (no pink by bone either(SERIOUS)

I use a home made marinade of vinegar, water, garlic, or garlic granules, touch of thyme, oregano, salt, fresh ground pepper,. make the marinade first and adjust the taste you want before you put the chicken in. Then add some oil, preferably olive, and marinade for a couple hours, you can also use a marinade of fresh sage, rosemary, the possibilities and tastes are limitless. I also use Emerils creole seasoning when I don't have time to marinate squeezing a fresh lime over the chicken, and under the skin. believe it or not, the steak seasoning made by McCormick's is really good for chicken if you like it spicy. Grill kind of med low no longer than 35 or 40 minutes depending on the size, the smaller chicken breast with the skin on is the best.

Lemon Barbecued Chicken.
2/3 cup lemon juice
1/3 cup vegetable
1 tablespoon soy sauce
2 teaspoons sugar
1 teaspoon salt
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon pepper
1/2 teaspoon garlic salt
1 medium onion, chopped finely
1/3 cup vinegar
1 broiler/fryer chicken (3-1/2 to 4 lbs), cut up
Combine the first 11 ingredients; set aside 1/4 cup. Pour re-
maining marinade into a large resealable plastic bag. Add chicken
and seal bag. Refrigerate at least for eight hours, turning
occasionally. Drain, discarding marinade. Grill the chicken,
covered, over medium heat for 45 minutes or until juices run
clear, turning and basting with reserved marinade every 8 -10
minutes. Yield: 6 servings.

I know the name isn't pretty,but the chicken is the best.Check out beer butt chicken at allrecipes.com.Customize the spices if you like,and make it your specialty on the grill.Wrap some sliced potatoes in foil with a little butter and your choice of seasonings,I like a package of dry ranch dressing and a little lemon juice,toss them together and grill 'til tender,about 20 minutes turning the packets over about every 5 minutes.Love this chicken.enjoy your meal,:)

Half the chicken, salt, pepper and paprika each half, both sides. Place each half on heavy duty foil big enough to wrap chicken in completely. Put about 13 cup of beer in the foil and wrap tightly. Put on grill, turning often. The last 10 mins. remove foil and brown.

We boil the chicken first. That way it's nearly done before you even put it in the oven, or on the grill. Then it takes much less time to get it done, plus it's moister.

Lemon Herb Grilled Chicken
from Campbell's Kitchen
Prep Time: 5 min. - Cook Time: 35 min.
1 3/4 cups Swanson(R) Chicken Broth (regular, Natural Goodness(TM)
or Certified Organic)
3 tbsp. lemon juice
1 tsp. dried basil leaves, crushed
1 tsp. dried thyme leaves, crushed
1/8 tsp. ground black pepper
4 bone-in chicken breast halves, skin removed
Directions:
MIX broth, lemon juice, basil, thyme and black pepper.
GRILL or broil chicken 35 min. or until chicken is done, turning
and brushing often with broth mixture. Discard remaining broth
mixture. Serves 4.
