i add about 1/3 cup of cream to about 1.5 cups of sauce. am i not adding enough? i simmer it for only about 3 minutes after i add the cream. should i simmer it more?

reduce the garlic white wine sauce first, when it begins to look a littlle like syrup, whisk in your cream. Make sure you use heavy cream.
Traditionally white wine sauces are thickened by first reducing and then using low heat, swirling in pats of cold butter
If you must use cornstarch make a slurry first -cornstarch + liquid mixed together- and remember all starch thickened sauces need to be boiled in order to determine their final thickness.
have some extra liquid handy in the event that it gets too thick

Some more information on this could help. Like, what kind of sauce are you trying to make? Whats in the other 1.5 cups of sauce? You could try simmering it more as that will definately thicken it up a bit. Good luck with your cooking!

Try simmering longer and maybe add some grated cheese if you don't want cheese add some flower to some cold water mix well and add approx. one table spoon to small amount of water bring to boil and turn down heat to simmer for 3 minutes

Simmer it more. It needs to cook down some. But, watch it carefully while it's simmering -- you'll need to stir it constantly and not let it completely boil because the cream will separate.

If you add a little cornstarch mixed in water it will thicken anything...without changing the flavor.

use for tomato paste or crushed tomatos if you want it thicker.

add some grated cheese to it also.

you have to let it reduce for it to thicken.
