I want to eat healthier, but I don't like any vegeatables at all. The green ones taste like grass to me. Is there any other ways to get these nutrients?

How about fruits they provide lots of the same nutrients and taste better.

I am a sneaky cook!

When I make meatloaf I use 1/4 grated carrots mixed with the meat!

When I make chili I start with chopped carrots, zucchini and onions and cook them to death in my crockpot....after an hour or 2 I add the meat and beans. When the beans are done the veggies are just sauce!

I make lasagna and add a layer of spinach in the middle!

I make Macaroni & Cheese with summer squash cooked into it!

My family has no idea how many veggies they actually eat without knowing it....hehehehehe!

Go to Cooking Light's website. They have vegetarian recipes that will make your mouth water just by reading the recipes.

Try different types of vegetables when you shop. I always pick up a fruit or vegetable that I have never tasted before.

Invest in good seasonings, such as Penzeys. They flavor your food in an unbelievable way. Also, get in the habit of using fresh herbs, such as basil (with tomatoes), chives (with cauliflower), etc.

V-8 makes carrot juice now and adds fruit juice so that you can't taste the carrots at all. It just tastes like punch. It's the best thing in the world for ya! Check out all the mega nutrition on the bottle. Read the ingredients, too.

There are TONS of things you can make with veggies instead of meat...

enchiladas - any type of veggie works (i use spinach, tomato or corn and black beans)
lasagna - throw in slices of squash and layers of spinach, tomatoes in between cheese layers
Stir fry - use any Asian veggies with sauce on top of noodles or rice
pasta - tons of dishes are without meat - pasta primavera, tomato-basil, regular tomato sauce with mush, spinach, onion, broccoli
veggie skewers on the BBQ - any combo of veggies OK, make sure to marinate them!
tacos - substitute beans or blackened mushrooms for meat

No real substitute for veggies, but you can hide them in soups, stews, casseroles, and the like., or juice them. If you juice them, be sure you're getting your fiber.

UGH THATS NOT WHAT SHE MEANT IRENA!! UGH SHE MEANT THAT SHE WANTED TO KNO WHAT SHE COULD USE THAT STILL GAVE HER THE SAME NUTRIENTS AS VEGGIES!! UGH SHE DIDNT SAY SHE DIDNT WANNA USE MEAT!!
