I forgot about a party I was invited to this evening. I'm not expected to bring anything, but they are good people.

7 Layer Mexican Dip
Ingredients :
2 can (Large) Refried Beans
2 can Jalapenos, or chilies
2 x Tomatoes, or more
1 x Onion, (optional)
16 oz Sour Cream
2 x Avacados (up To 4)
2 pkt Taco Seasoning
Shredded Cheese, (Mozzarlla and chedd
1 can Olives (up To 2)

Method :
Mix the refried beans and taco seasoning together (I also mix the chili's in with this, but some people put the chilis as a layer) Mix this really well (I used a food processor, but today I am going to use my mixer). This is the first layer.
Put a layer of sour cream on top of the refried beans, taco seasoning and chilis.
Next put a layer of well mixed/mushed avacados (you need enough to cover the pan, I use a cake pan normally) on top of everything else
Next sprinkle cheeses on top (I just thought about it and I put the avacado first and then the sour cream, but I suppose it doesnt matter). I think the more cheese the better myself

Next cut up tomatoes and add as many as you like, which I like to use at least 2 cut up tomatoes.
Last put chopped up olives.
Put in the oven until the cheese is melted. I use a low heat so that everything else warms up.
Last but not least pull out the chips and dip! Everyone really enjoys this dip. I hope you do too.

Chicken Broccoli Pastries
Ingredients :
1 pkt Frozen broccoli, chopped (10z)
1 tbl Butter or margarine
1 tbl All-purpose flour
1/2 tsp Dried dill weed
1/2 tsp Salt
1/4 tsp Dry mustard
1/8 tsp Garlic powder
1 pch White pepper
3/4 cup Milk
1 pkt Cream cheese, (3oz)
1 cup Cooked chicken, chopped
1 pkt Refrigerated crescent rolls
1 x Egg white, beaten
1 x Dill weed

Method :
1) Place broccoli in 1-quart casserole. Cover. Microwave at hight for 4-5 minutes, or until defrosted, stirring once to break apart. Drain. Set aside. In 4-cup measure, microwave butter at high for 45 seconds to 1 minute, or until melted.
2. Stir in flour. 1/2 tsp. dill weed, the salt, mustard, garlic powder and pepper. Blend in milk. Mircrowave at high for 3 to 4 minutess, or until mixture thickens and bubbles, stirring 2-3 times.
3. Place cream cheese in small dish. Microwave at hight for 15-30 seconds, or until sofened. Add to sauce. Beat well with whisk until smooth. Stir in broccoli and chicken. Set aside.
4. Heat oven to 350F. Remove crescent rool dough from package. Separate into 4 rectangles. Press perforations to seal. Press or roll each rectangle to 6" square.
5. Spoon about 1/2 cup of chicken mixture evenly into center of each square. Bring all 4 corners of each square to center. Pinch to seal. Pinch open edges and corners to seal.
6. Place on ungreased baking sheet. Brush tops of pastries with egg white.
Sprinkle lightly with dill weed. Bake for 18 to 24 minutes or until dark golden brown.

Or cream cheese and pour some fruit/ pepper jelly over the top and serve with a small box of good quality butter crackers???

quick garlic pull-apart bread:

1 loaf frozen bread dough, thawed

1 stick margarine, melted, with the following mixed in:
1 tbl parsley flakes (or chopped fresh parsley)
1/2 tsp salt
2 tsp garlic powder or 1to2 tsp mashed garlic
1/2 tsp onion powder OR 1 tsp dried chives

tear bread dough into smallish pieces, dip pieces in marg mixture, pile into a loaf pan, and bake according to package instructions on the bread dough

This stuff is out of this world!

Tortilla Rollups
INGREDIENTS:
10 (10 inch) flour tortillas
1 (8 ounce) package jalapeno cream cheese
1 (5 ounce) jar pimento cheese spread
1 (8 ounce) jar salsa
1 (4 ounce) jar dried beef
1 bunch green onions, diced

--------------------------------------------------------------------------------

DIRECTIONS:
Lay tortillas flat and spread each with equal amounts of jalapeno cream cheese, pimento cheese spread, and salsa. Layer each tortilla with two pieces dried beef, and sprinkle with green onions. Tightly roll. Cut into bite-sized pieces and secure with toothpicks. Cover and chill in the refrigerator at least 12 hours before serving.
