Southern Sweet Potato Pie

NO FAIL PIE CRUST
1 (3 ounce) package cream cheese, softened
6 tablespoons unsalted butter, softened
1 1/4 cups all-purpose flour
1 tablespoon sugar
1/4 teaspoon salt
SWEET POTATO FILLING
2 cups mashed sweet potatoes, , pureed (, about 2 1/4 pounds)
1 cup sugar
1/4 cup brown sugar
3 tablespoons butter, melted
1 tablespoon fresh lemon juice
1/2 teaspoon freshly ground nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon grated lemons, zest of
3 large eggs, beaten
1/2 cup half-and-half

For crust: Blend together cream cheese and butter.
Add flour, sugar and salt and stir until dough starts to stick together.
Form into a disk.
Wrap in plastic wrap and refrigerate for an hour.
Prepare filling: Combine all ingredients in mixer bowl.
Blend until smooth.
Preheat oven to 400 degrees.
Roll dough and place in pie pan.
Pour in filling.
Bake for 20 minutes at 400 degrees.
Reduce heat to 325 degrees.
Continue baking until firm in center, about 20 minutes longer.
Cool completely before slicing.
Top with whipped cream to serve!

2 cups peeled, cooked sweet potatoes
1 1/4 cups sugar
1/2 stick melted butter
2 eggs
1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup milk
9-inch unbaked pie crust
3 egg whites

Preheat the oven to 350 degrees F.

For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.

For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10 to 12 minutes, or until delicately browned. Cool and serve.

Directions:
Combine sweet potatoes, brown sugar, butter, egg yolks, spices, and salt in a large mixing bowl; beat until light and fluffy. Add evaporated milk; mix just until combined.

Beat egg whites until foamy; gradually add sugar, beating until stiff. Fold into potato mixture. Pour filling into pastry shell. Bake at 400 degrees for 10 minutes; reduce heat to 350 degrees and bake an additional 45 to 50 minutes or until set.

Cool. Top with whipped topping if desired.

Peanut Butter & Chocolate Oat Drop Cookies

* 1/2 cup milk
* 1 1/2 cup sugar
* 3 Tbl. cocoa

Bring to a boil and cook for 1 full minute. Remove from heat and add:

* 1/2 cup peanut butter
* 1 t vanilla
* 3 cups oats

Stir and drop on wax paper. Cool for at least 30 minutes.

EASY AND WONDERFUL NO BAKE COOKIES

2 cups white sugar
4 teaspoons cocoa
1/2 cup milk
1 stick butter
2 tablespoons peanut butter
1 teaspoon vanilla
3 3/4 cup quick oats
1 cup coconut

In a medium size saucepan combine sugar, cocoa, milk and one stick of butter. It's best for butter to be at room temperature.
Melt butter at medium heat and stir all ingredients together. Continue to stir until all ingredients come to a boil.

Once boiling, remove from heat and allow to stand for one minute.

Add vanilla and peanut butter and mix well. Stir in oats and coconut.

Put a large sheet of aluminum foil or wax paper out on the counter and place little scoops of your new treat on it. Serve while still warm or at room temperature.

NO BAKE CHOCOLATE OATMEAL COOKIES
1 stick butter
1/4 c. cocoa
1/2 c. milk
2 c. sugar
1 T. vanilla
1/2 c. peanut butter
3 c. oats

Boil butter, cocoa, milk, sugar, vanilla & peanut butter for 1 minute. Add oats & mix well. Spoon out onto wax paper. Ready to eat!
