Chimichanga-- [chee-mee-CHAN-gah] This specialty of Sonora, Mexico, is actually a burrito that is fried or deep-fried. It can contain any number of fillings including shredded chicken, beef or pork, grated cheese, refried beans and rice. To prevent the filling from spilling out during frying, the flour tortilla must be rolled around it, with the ends tucked in. Chimichangas are often garnished with salsa, guacamole, sour cream and shredded cheese.

The Chimichanga, or chivichanga, (pronounced chimmy·CHAHN·guh /tʃɪmiˈtʃɑŋə/) is a deep-fried burrito that originated in Tucson, Arizona. Flour tortillas are folded into rectangular packages and filled with a wide range of ingredients, most commonly beans, rice, cheese and shredded meat. They are then deep-fried and served without a sauce but may be accompanied with salsa, guacamole, sour cream or cheese.

Tucson restaurateur Carlotta Flores attributes the invention of chimichangas to her great aunt, Monica Flin. Working at the El Charro Mexican Restaurant in Tucson, which Flin opened in 1922, a leftover burrito was sitting on a counter, and Flin accidentally dropped it into the deep fryer and was about to say "¡Ay, chingado!" ("Oh, ####!"), but her young nieces and nephews were present, so she switched it to "¡Ay, chi... michanga!". When she sampled her new concoction, she liked it so much she decided to give it a name and put it on the menu.

The origin of the chimichanga is subject to debate among the owners of Tucson's older Mexican restaurants.

Chimis are usually fried burritos, though I have had a few where it's simply a burrito with sauce on top aka enchilada style burrito.

If you really think about it, Mexican food in the U.S. is all the same... usually some type of tortilla, whether it's fried flat for a tostada, fried in U shape for a hard taco, fried rolled tightly for a taquito, flour tortilla, corn tortilla etc. and then the inside stuff... chicken or beef!
