We thought of blueberry buckle, blueberry pie, blueberry muffins, blueberry pancakes, blueberry jam. Just wondering if you all have any other ideas. Thanks in advance.

Freeze a bunch and save for smoothies. Blueberries are sooooo good for you and make wonderful, healthy smoothies.

They are also good tossed into a spinach salad with feta cheese and dressed with balsalmic vinegar.

I got this from my mother

Blueberry Delight

2 cups graham crackers
1/2 cup sugar
1/2 teaspoon cinnamon
1/2 cup melted butter
Filling
16 ounces cream cheese
1 cup sugar
2 teaspoons vanilla
4 eggs
Topping
1 (16 ounce) can blueberry pie filling

For the crust, mix the graham cracker crumbs, sugar, cinnamon and melted butter together with a fork until well blended and crumbly. Press mixture into a 9x13 baking pan.
For the filling, cream together the cream cheese, sugar and vanilla. Add eggs and beat well.
Bake at 350 degrees Fahrenheit for 25 minutes. Do not overbake. Mixture will set up as it cools.
When cool, completely cover with blueberry pie filling.
Chill overnight

It's not my favorite - pie is but it's pretty cool. You take marshmellows and cover the bottom of a cake pan, make a cake mix and put it on top, then "spread" blueberry pie filling ( or just blueberries is you want) over the top. While it is cooking the marshmellows should rise through the cake mix, and the blueberries should sink. Turning it into a a very sweet upside down cake.

Summer berries team with sliced apples for a great family dessert.
INGREDIENTS:
4 large cooking apples, peeled and sliced or coarsely chopped
1 1/2 to 2 cups raspberries
1 cup blueberries
1/3 cup granulated sugar
1 tablespoon cold butter, cut in small pieces
1/4 cup melted butter
1/3 cup brown sugar
2/3 cup sifted all-purpose flour
dash salt
1/4 teaspoon baking soda
2/3 cup quick cooking rolled oats
PREPARATION:
Heat oven to 325°. Butter an 11x7-inch baking dish.
Combine sliced apples, berries, and granulated sugar. Toss to coat. Dot with small pieces of cold butter. Combine the melted butter with the brown sugar, flour, salt, baking soda, and rolled oats.
Sprinkle the mixture evenly over fruit.
Bake for 45 to 55 minutes, or until fruit is tender and topping is browned.

Blueberry Buckle

Ingredients:

1/2 cup shortening
3/4 cup sugar
1 egg
2 cups sifted all-purpose flour
2-1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 cups fresh blueberries
1/2 cup sugar
1/2 cup sifted all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup butter or margarine

Preparation:

Preheat oven to 350°F.

Thoroughly cream shortening and 3/4 cup sugar; add egg and beat until light and
fluffy. Sift together 2 cups flour, baking powder and salt. Add to creamed
mixture alternately with milk.

Spread in greased 11x7x1-1/2 inch pan. Top with berries. Mix 1/2 cup sugar, 1/2
cup flour, and cinnamon; cut in butter until crumbly; sprinkle over berries.
Bake in preheated oven for 45 minutes.

Cut in squares and serve warm topped with vanilla ice cream.

BANANA BLUEBERRY POUND CAKE

1½ cups canola oil
2½ cups sugar
3 eggs
3 cups flour
1 teaspoon soda
¾ teaspoon salt
½ cup buttermilk
2 bananas, mashed
1½ teaspoon vanilla
1 cup pecans, chopped
¾ cup fresh or thawed blueberries

Mix oil, sugar and eggs. Add flour, soda, salt and mix together. Toss
in pecans, and blueberries. Add buttermilk, bananas, vanilla.

Bake in greased tube pan at 325º for approximately 1 hour and 25
minutes.

Suggestion: Serve a slice with vanilla or banana ice cream, for a
lovely dessert.

Oregon Blueberry Ice Cream

2 pints Oregon blueberries
1 quart whole cream
2 large egg yolks or equivalent pasteurized egg substitute
3/4 cup granulated sugar
1/4 cup water
1 lemon, juice and zest
Pinch salt
Pick through Oregon Blueberries to remove any stems.
Melt sugar in water, lemon juice and zest to approximately 125°F.
In another pan, heat cream to about 100°F.
Purée berries.
Add puréed blueberries to simple syrup mixture while still 125°F until
bright blue not cooked.
In a large mixing bowl combine beaten yolks or egg substitute and a
pinch of salt. Then slowly mix cream and yolks together, whisking
constantly. Now add Oregon Blueberries to cream mixture. Place in
refrigerator for 45 minutes to chill.
For best results, use a 5-quart ice cream maker with an electric motor
top and wooden bucket. Chill to 45°F with lots of ice and rock salt.
Makes about 1 1/2 quarts or about 12 half-cup servings.

Per serving: 360 calories (2.7% from protein, 76.5% from fat, 23.8%
from carbohydrates), 2g protein, 31g fat, 32g carbohydrates, 36mg
sodium, 147mg cholesterol.

Chop the fruit finely and put in the freezer overnight.Liquidize to make a refreshing 'fruit ice'
