Definitely use extra virgin olive oil. Vegetable oil is used more for cooking. For salads, extra virgin olive oil is the way to go.

Olive oil is more desirable to use in salad dressings. If I could only have one oil in my cupboard, it would have to be olive oil. Not only is is healthy for your diet, it is the world's best moisturizer when used directly after showering BEFORE you dry off. Try it, you'll love it!

Use the one that you prefer it's your taste buds you need to satisfy. I myself prefer to use olive oil but if it's not handy vegetable oil is perfectly acceptable.
