How about a nice juicy, spicy Chicken Casserole with Jacket potatoes?

Here's how I'd do it (serves 2):

Get your Chicken breasts & slice them through the side to make pockets. Put some fresh shredded Basil and Mozzarella in there.

Then get a casserole pan you can cover and also use on the hob, and fry some sliced onion, 2 cloves of sliced garlic, 2 rashers of chopped smoky bacon, and a finely chopped Red Bell Pepper in some Olive Oil. Then pour in about 150ml of nice Passatta, and 150ml of good quality Red Wine.

Then add about 300ml of Stock, & make sure everything is nicely stirred together.

Then add 1 heaped teaspoon of ground Paprika, 1 flat teaspoon of ground Cumin, a pinch of Saffron, pinch of Turmeric, Salt and Freshly Ground Black Pepper to taste, finely ground White pepper (same amount as the Black pepper you used), a big handful of shredded fresh Basil, some Oregano and Thyme (about half as much of each as the Basil you put in).

Stir everything together well, and taste it. Add more Paprika or salt or whatever you need, according to your taste. Then put in a teaspoon of Sugar (to take away some of the acidity).

Then turn off the hob, stick in your chicken breasts, some sliced mushrooms and put it in a preheated oven at 200C for 1hr.

Don't forget your potato - may take less or more time in the oven depending on how big it is.

Then when you take it out of the oven, thicken the sauce with Cornflour if you want to.

Bon apetit!

This has to be one of the most asked questions. I'm glad to see it isn't just me. I have to admit that spam and chips are sounding very good. Thank you for the idea Bubbles.
