I'm working in a fine wine shop, so I have immediate access.
Suggestions.

But there's not a varietal out there I haven't sampled, I'd like some specific wine sugesstions. I'm craving Planeta Syrah, but it's $50. and this is not a $50. day

Have you tried a Molly Dooker wine yet? Last Saturday I tried their "The Violinist" (100% young vine Verdelho), "The Boxer Shiraz" and a glass of their "Two Left Feet" (65% Shiraz, 19% Merlot, and 16% Cabernet Sauvignon blend) this was some fantastic wine that I highly recommend. And it was pretty reasonably priced.

Be adventurous, try something new. If you like full bodied reds, go for an Argentinian Malbec, a German Spatburgunder, a Gigondas (french), an Italian Barolo, or a Lagrein, from the north of Italy. If you like whites, try an Alsacien Gewurtztraminer, or Sylvanner. From the south of France, try a Sancerre. You could also try a dry Muscato from italy. Don't forget about Rose. A good French, Spanish, or Italian Rose could be perfect. If you find one from Provence, France, snatch it up, they are the best Rose's in the world.

The Ruffino Orvieto... very nice white.

have you tried a white Marsanne . . it's the grape used in white chateau neuf de pape .. . . . it's an interesting grape . . .
