To make marshmallows at home, combine 3 tablespoons of gelatin (a professional-grade concentrated gelatin would be a good choice, but generally is available only to the food industry) with 1/2 cup of cold water and let it stand for an hour. In the meantime, heat 2 cups of sugar, 3/4 cup light corn syrup, 1/2 cup of water, and 1/4 teaspoon of salt. Bring it to a boil and cook until the firm-ball stage (244°F; 117°C). Remove from the heat and pour it slowly over the gelatin, beating it constantly in a stand mixer. Beat it for a good 15 minutes. When it’s thick but still warm, add 2 tablespoons of vanilla or other flavoring (mint, strawberry, orange, flower water, etc.), if desired. Spread the mixture in a pan that has been lightly dusted with cornstarch. Let it dry for 12 hours, then cut it into squares with scissors dusted with cornstarch, and store them in an airtight container.

I believe the root should be macerated (soaked in water) overnight, and
then strained and whipped. Sugar is certainly added, but I don't know
what else. Egg-whites with some extra gelatine would probably give a
set foamy texture, but I haven't tried it.
Hope I've at least helped a little bit x
Indoor S'mores
4 cups honey graham cereal (i.e. Golden Grahams)
3 tablespoons margarine
6 cups miniature marshmallows 1/4 cup light corn syrup
1 1/2 cups milk chocolate chips
Coat a 9x13 inch dish with cooking spray. Place cereal into a large bowl; set aside. In a medium saucepan over low heat, melt margarine. Add marshmallows and corn syrup and stir until melted and smooth. Stir in chocolate chips until melted. Remove from heat and pour over waiting cereal; stir well to coat. Press into prepared pan. Cool completely before cutting into squares.
Peanut Butter Marshmallow Squares
1/2 cup butter
1 (11 ounce) package butterscotch chips
1 cup peanut butter 1 cup flaked coconut
1 cup chopped walnuts
3 1/2 ounces miniature marshmallows
In the lower pot of a double boiler, add water halfway to top and bring to a boil. Reduce heat to a simmer. In the top of a double boiler, heat butter, butterscotch chips, and peanut butter until melted. Remove from heat. Stir in coconut, walnuts, and marshmallows. Pour mixture in buttered pan. Refrigerate and cut into squares. Store in the refrigerator.
Marshmallow Cubes
Two cupfuls light-brown sugar
One-half cupful milk
One even tablespoonful butter
One-half pound marshmallows
Put the sugar, milk, and butter into the kettle, place over the fire, stir
constantly, and boil to 240°, or until it forms a soft ball when dropped into
cold water. Then remove from the fire, add the marshmallows cut into small
pieces, and beat until the mass becomes creamy, when it must be poured out
on the buttered slab or pan. When cold, cut into cubes like caramel.
Marshmallow Cherry Cubes
Follow the preceding recipe, and just before turning the candy out, stir in one
dozen or more minced candied cherries.
Marshmallow Nut Cubes
Use the recipe for marshmallow cubes, and when the candy has been beaten
enough to turn from the kettle, add one cupful of chopped nut meats.
Marshmallow Cubes Dipped
The cubes made over any one of the three preceding recipes may be dipped
in dipping cream or chocolate.
