Spinach Lasagna

INGREDIENTS:
20 lasagna noodles
2 tablespoons olive oil
1 cup chopped fresh mushrooms
1 chopped onion
1 tablespoon minced garlic
2 cups fresh spinach
3 cups ricotta cheese
2/3 cup grated Romano cheese
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil leaves
1/2 teaspoon ground black pepper
1 egg
3 cups mozzarella cheese, shredded
3 cups tomato pasta sauce, divided

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
In a skillet over medium-high heat, cook mushrooms, onions, and garlic in olive oil until onions are tender. Drain excess liquid and cool. Boil spinach for 5 minutes. Drain, then squeeze out excess liquid. Chop spinach.
Combine ricotta, Romano, spinach, salt, oregano, basil, pepper, and egg in a bowl. Add cooled mushroom mixture. Beat with an electric mixer on low speed for 1 minute. Lay 5 lasagna noodles in bottom of a 9X13 inch baking dish. Spread 2 cups of the cheese/spinach mixture over noodles. Sprinkle 1 cup mozzarella and 1/3 cup parmesan on top. Spread 1 cup spaghetti sauce over cheese. Repeat layering 2 times.
Cover dish with aluminum foil and bake in a preheated oven for 1 hour. Cool 15 minutes before serving.


Pork Loin Stuffed with Spinach

INGREDIENTS:
1/2 (10 ounce) package frozen chopped spinach, thawed and drained
3 tablespoons margarine
1/2 cup diced onion
1 clove garlic
1/3 cup dry bread crumbs
3 pounds pork tenderloin
2 tablespoons ketchup
1/4 cup orange juice
2 tablespoons teriyaki sauce
1/2 teaspoon ground cumin

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Saute spinach, butter, onions and garlic over medium heat until soft. Add bread crumbs. Cut tenderloin in half lengthwise. Stuff with spinach mixture and secure with kitchen twine.
In a bowl, mix ketchup, orange juice and teriyaki sauce. Baste tenderloin with 1/2 of the mixture. Sprinkle pork with cumin. Place in shallow roaster and bake at 350 degrees uncovered for one hour. Baste with reserved marinade and cook one more hour covered. Use meat thermometer to check for doneness. Thermometer should read 160 to 170 degrees F (71 to 77 degrees C)

STUFFED FRENCH TOAST

1 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla
1/2 c. walnuts or pecans
1 loaf white bread
4 eggs
1/2 c. whipping cream
1/2 tsp. vanilla
1/2 tsp. nutmeg
1 (12 oz.) jar apricot preserves or seedless raspberry jam
1/2 c. orange juice

Beat the cream cheese and vanilla together until fluffy. Stir in the nuts. Spread about 1 1/2 tablespoon of the mixture on a slice of bread. Top with a second piece of bread (like a sandwich). Repeat this process 10-12 times until the mixture is all used.

Beat together the eggs, whipping cream, vanilla and nutmeg. Dip the "sandwiches" into the egg mixture. Cook on a lightly greased griddle until golden brown, turn to cook the other side. Keep the cooked "sandwiches" warm by placing them on a baking sheet in a warm oven.

Meanwhile, heat together the preserves and orange juice. To serve, dust the Stuffed French Toast with powdered sugar and drizzle the warm sauce over the top. Makes 10-12 pieces.

I would suggest a whole grain cereal (I like Cheerios Multi Grain) with skim or 1 % milk. I put a banana in mine, or else they can eat an apple or other fruit. It is usually a good idea to have some protein if possible. The healtiest is egg whites, but if you don't have cholesterol problems a whole egg is fine. (I scramble mine - and usually cook it in the microwave) This is a very EASY, QUICK, and HEALTHY breakfast. (You could also substitute oatmeal for the cereal)

Recipe for eggs in a basket,
What you'll need
1 egg
1 piece of bread (your choice)
butter

First cook a fried egg, then butter both sides of the bread, take a cup or round cookie cutter and cut a hole in the center of the buttered bread, next you'll put the fried egg in the hole of the bread, to make the egg fit you can use the cup or cookie cutter, now brown the bread in a skillet on both sides, that's it, Enjoy!

Note-You can put syrup on them!

ZIPLOC Omelets

(This works great! Good for when all your family is together and no one has to wait for their special omelet) . Start a large pot of water on the stove with the burner tuned up to med/high or high - need water to boil. Have guests write their name on a quart-size ziploc freezer bag with permanent marker. Please use the Ziploc brand since they will hold up to the boiling and the cheaper brands have a tendancy to bust.

Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them pinch yokes through bag with fingers to bust them if necessary. Season with salt & pepper, cayenne, fresh basil or the seasonings you prefer (fresh basil is really good with eggs)

Put out a variety of ingredients such as: shredded cheeses, ham, bacon, sausage, onion, green pepper, mushrooms, tomato, hash browns, salsa, etc. Make sure any meat is already cooked prior to setting it out.

Let each guest add prepared ingredients of choice to their bag and shake it. Make sure to get all the air out of the bag and zip it up. Don't let them put to much added ingredients into the eggs - remember we are only using 2 eggs and will need them to set up when cooked. Place the sealed bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.

Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed!

Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.
