I prefer the tart and crisp taste of a Granny Smith but others are good as well!

Granny Smith's have a lot more calcium and are more acidic compounds that become sweet with time or heat; so they last longer, sweaten more once their picked, and hold up better when cooked. Plus they don't get meally so easily. But, all that being said, a good Delicious is a thing of beauty.
