It's best not to eat ANYTHING at least 2 hours before you go to sleep for the night....At least that is what I have heard...But, darn it...that is usually when I get hungry for a snack! ;-)

I think you are confused..breads, rice, and pasta are not low carb they are high carb. And yes, you should eat low carb at night because your body doesn't have enough time to burn all those carbs before sleeping. Try having lean meats like chicken or fish with lots of veggies for dinner.

It's been proven that the TIME you eat has absolutely NO effect on your weight. The only thing that matters is the total amount. The myth that you shouldn't eat after 7pm (or 8pm, or whatever) has no basis in fact.

I wouldn't eat any of those items past 7pm. They are good for you but not at that time. Your metabolism slows down at night so it's harder to burn it off. Instead drink some green tea with splenda and apple slices.

I've done it and it hasn't made me gain. But next time you're hungry, how about drinking water instead? Sometimes you realize then that you actually are just thirsty.
