Easy Pork Chop Bake
INGREDIENTS:
6 pork chops, 1-inch thick
salt and pepper, to taste
6 slices lemon
1/3 cup brown sugar
1/3 cup ketchup
PREPARATION:
Spray a baking dish with nonstick cooking spray.Arrange pork chops in the baking dish; sprinkle with salt and pepper. Place a lemon slice on each. Combine brown sugar and ketchup; top each chop with a dollop of the ketchup mixture.
Cover and bake in a preheated 350 degree oven for about 1 hour. Uncover and cook for an additional 30 minutes.
Serves 6.

Prime Rib Roast
Serving Size : 10
1 (14-16 lbs) Beef rib, roast ready
12 Garlic cloves, peeled
6 Fresh thyme sprigs
1/2 Tsp Salt
1/4 Tsp Freshly ground black pepper
Preheat the oven to 350ºF.
Using a sharp knife, make a slit 3/4 of the way up the fat cap. Pull the fat cap back and season the entire roast with Emeril's Essence. Place the garlic, and thyme in-between the meat and fat cap. Lay the fat cap back over the vegetables and meat. Using butchers twine, secure the fat cap to the meat by tying the two together at six different intervals (wrap the twine from the rib end to the loin end). Cover the exposed fat cap with cracked black pepper.
Place the roast, rib side down, on a wire rack. Place the wire rack in the oven on the center rack. Place a drip pan on the bottom rack of the oven. This will catch all of the drippings from the roast. Roast for 1-1/2 to 2 hours for medium-rare.
Remove the roast from the oven and allow to rest for 10-15 minutes before slicing. Using knife, cut away the butchers twine. Carve the roast into individual servings. Reserve the drippings for later use.

I love to bake "Hobo Jo's" in the oven for an easy meal. Use 1lb hamburger & pat out 4 patties. Take 4 good size pieces of foil & place hamburger patty in center. Slice 1 potato over each, then one carrot after peeling. Drizzle w/ olive oil & worchester sauce. Bake @ 350 for about 30 minutes rotating a few times.....Serve w/good garlic bread!

Beef Tenderloin Steaks with Blue Cheese Topping
Makes 4 servings
Ingredients:
Steaks:
4 beef tenderloin steaks, cut 1 inch thick (about 1 pound)
1 large clove garlic, cut in half
1/2 teaspoon salt
2 teaspoons chopped fresh parsley
Blue Cheese Topping:
2 tablespoons cream cheese, softened
4 teaspoons crumbled blue cheese
4 teaspoons plain yogurt
2 teaspoons minced onion
dash ground white pepper
Preparation:
Combine topping ingredients in small bowl.
Rub both sides of beef steaks with cut sides of garlic clove. Place steaks on rack in broiler pan so surface of beef is 2 to 3 inches from heat.
Broil 13 to 16 minutes for medium rare to medium doneness, turning once. One to two minutes before steaks are done, top evenly with topping.
Season with salt, sprinkle with parsley.
