Vegetable Korma

Green masala paste
Chili powder
Fresh ginger, grated
Onion, chopped
Cauliflower, cut into florets
Pumpkin, cut into large pieces
Eggplants (aubergines) cut into large pieces
Carrots, cut into large pieces
Tomatoes, peeled, seeded and chopped
Vegetable stock
Green beans, chopped
Method :
Heat the cooking oil in a large heavy-based pan.
Add the masala paste and cook over medium heat for about 2 minutes or until the oil begins to separate from the paste.
Add the chili powder, ginger and onion.
Then cook for 3 minutes or until the onion softens.
Add the cauliflower, pumpkin, eggplant and carrot and stir to coat in the paste mixture.
Stir in the tomatoes and stock and bring to the boil, then reduce the heat and simmer, uncovered for 30 minutes.
Add the beans and cook for 10 minutes or until the vegetables are tender.
Serve with rice.
Note : To make Blati Vegetable Korma, replace the green masala paste with Balti masala paste.

CHICKEN KURMA
2 lg. onions
2 cloves garlic
3 tbsp. butter
1 1/2 tsp. grated fresh ginger
3 cloves
4 whole cardamoms
1 stick cinnamon
2 bay leaves
6 to 8 skinless chicken thighs
1 tbsp. ground coriander
2 tsp. ground cumin
1/4 c. yogurt
2 potatoes
Salt
Pepper
1/2 c. light cream
Sugar
Saute the first 8 ingredients. Add chicken thighs and cook several minutes on each side. Add the ground cumin and coriander. Cook several minutes longer and add yogurt. Reduce heat and cook, covered, about 45 minutes until chicken is tender. Add potatoes 20 to 25 minutes before chicken is tender. Add salt and pepper to taste. Add about 1 tablespoon sugar and the light cream. Cook uncovered 10 minutes or until sauce is thick. Serve over rice.
A Bengali dish usually served during Eid or special occasions.

You'll hate me for this - but if you need quick, get one of those ready-made sauces. M&S do a really delicious one.
I don't think making it from scratch is ever going to be that simple - there's a lot of ingredients.
