I absolutey adore can anybody give me any recipes for dishes i can cook with spinch.

Chicken & Spinach Frittata Recipe

Ingredients


1 1/2 pounds fresh spinach
1/2 cup water
2 chicken breasts, boneless, cut into small pieces
1/4 cup olive oil + 1 tsp
2 garlic cloves, minced
1 red onion, minced
1 red bell pepper, diced small
1 green bell pepper, diced small
12 large eggs
1 cup cream
8 oz Gorgonzola cheese, crumbled
1/4 tsp salt
1/4 tsp black pepper, freshly ground
Directions


Wash the spinach and place in a large pot. Add the water and cook until just wilted. Set aside to cool.
In a large skillet, over medium-high heat, heat the olive oil.
Saute the onion for 2 minutes. Add the garlic and bell pepper and continue cooking until the peppers are soft.
While the onion and peppers are cooking, crack the eggs into a large bowl and beat.
Coat the bottom and sides a large frittata pan with 1 tsp olive oil.
Spread the onion and peppers on the bottom of the pan.
Blend into the eggs the cream, salt, and pepper.
Pour the egg mixture over the onion and peppers.
Drain the spinach if neccesary.
Mix together the spinach, chicken, and Gorgonzola.
Sprinkle the spinach-chicken mixture on top of the eggs.
Place in a 375F degree oven and bake for 1 hour, or until the top is brown and the center is firm.
Serve immediately.

This is creamy and delicious! I like to serve it with mixed veggies.

Chicken Parmesan
Serves 6

1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped

Instructions:
Preheat the oven to 350ºF

In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.

Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender

Four-Cheese Spinach Lasagna Recipe

Ingredients:
2 cups chopped fresh broccoli
1 cup julienned carrots
1 cup sliced green onions
1/2 cup chopped sweet red pepper
3 garlic cloves, minced
2 teaspoons vegetable oil
1/4 cup all-purpose flour
3 cups milk
1/2 cup grated parmesan cheese, divided
1/2 teaspoon salt
1/4 teaspoon pepper
10 ounces frozen chopped spinach, thawed and well-drained
1 cup small-curd cottage cheese
1 cup shredded mozzarella cheese
1/2 cup shredded Swiss cheese
12 lasagna noodles, cooked and drained

Directions:

In a skillet, saute the vegetables and garlic in oil until crisp-tender. Remove from the heat; set aside. In a heavy saucepan, whisk flour and milk until smooth. Bring to a boil; cook and stir for 2 minutes. Reduce heat; add cup parmesan cheese, salt and pepper. Cook 1 minute longer or until cheese is melted. Remove from the heat; stir in spinach. Set 1 cup aside.

In a bowl, combine cottage cheese, mozzarella and Swiss cheese. Spread cup spinach mixture in a greased 13-by-9-by 2-inch baking dish. Layer with four noodles, half of cheese mixture and vegetables and cup spinach mixture. Repeat layers. Top with remaining noodles, reserved spinach mixture and remaining parmesan cheese. Cover and bake in 375-degree oven for 35 minutes. Uncover; bake 15 minutes longer or until bubbly. Let stand 15 minutes before cutting.

hot spinach artichoke dip.

- one frozen package of creamed spinach thawed
- one small can of artichoke hearts in unseasoned brine chopped
- one large clove of garlic minced
- one cup shredded parmesan cheese
- one cup cheddar cheese
- one half cup mozzarella cheese or italian mix cheese

mix ingredients in a large bowl. Can be heated in the microwave until completely melted...stirring occasionally. Or can be heated in the microwave mostly and then put in a baking dish and finished off in the oven with some cheese sprinkled over the top.

This is yummy with tortilla chips or a toasted flatbread.

add tin of spinach. to shallow oven proof dish . crack an egg into middle . cover with a little cheese sauce , then some parmesan . bake in oven for 20 mins at medium heat . until egg is cooked . lovely . enjoy with some nice crusty bread . bon appetite .

line a pie dish with several layers of buttered filo pastry then add cooked spinach and feta cheese cover with buttered filo pastry and cook until the pastry is golden and crisp. It can be served hot or cold and is delicious

Hey there,
This is something i tried out one day, hope you will love it as much as i do:

Cook your chicken breast until 3/4 done, make a cut in the middel so that it bocomes a kind of pocket. Preheat your oven at 120degrees C (not sure what F it). cut spinich in pieces not to big or to small, nice bite size pieces. mix it in a mixing bowl with chop & panfried onions & motzerella cheese with abit of fresh cream ( about 200ml depending on how many pieces of chicken you make). Stuff your chicken breast with mixture and close the gap with toothpicks. Put a sliced ring of pineapple on top of your chicken and wrap it all up in bacon. Mix the rest of your cream with brown onion soup powder and water to make a nice sauce with you through over your chicken pieces and put in the oven until your bacon is nice and crispy. Make sure to coat chicken with sause about every 5min so that it doesn.t dry out. Serve it with wild rice and white wine. Enjoy your meal!!!

Best spinach i ever had was stir fried. Heat oil in wok, add roughly chopped fresh garlic (don't let it go brown otherwise will be bitter) add fresh, young and washed spinach. Stir fry for approx 2mins - salt and pepper to taste - enjoy.

I love spinach. We take it boiled with boiled gram and grated coconut with lit bit of spice. Add a bit turmeric to kill the germs during boiling. Make sure the boiled water is thrown out and for boiling grams we use fresh water. Yummy...goes well with rice or yam balls...very filling.
