Im looking for a nice set of chefs knives, Ive been looking on ebay & there are many different varieties & prices, the japanese set really caught my eye, do you have any advice?

I am a Chef 22 years now and i use Gustav Emil Ern chefs knives manufactured in Solingen, Germany. Highest grade stainless steel with a Rockwell rating of 52-54, guarantee a superior and longer lasting cutting edge together with high corrosion resistance.

Others use Victorinox Knives
Finest quality Swiss professional chefs knives from Victorinox. Over 100 years of experience has resulted in this superb range of knives.

Forget about Shogun and Global Japanese knives the handle at the start of the blade in Global`s really hurt your hand after use. Shogun`s are cheap crap and are dangerous because the blade bends and they are easy to lose control of.

Gustav Emil Erin top knives used by top chefs.

Forget TV knife sets also, i have yet to see a decent set.

Gustav`s are expensive but you pay for quality.

Wusthof Trident knives are rated as the best in the world by many top chefs. Forged from one solid chunk of high carbon stainless steel. Also great knives

And Sabatier Knives...
Sabatier chefs knives produced by Deglon, one of the original factories that created the famous Sabatier reputation. These knives feature riveted bolstered handles and stainless steel blades (with a forged solid bolster on Cooks Knives). Also good knifes not as good as Wusthof Trident and Gustav Emil ern`s. the two best chef kinfes in the world.

Look for FULL TANG knifes that means the blade goes all the way through the handle giving a stronger knife.

Any above should last a lifetime and more if well cared for.

my b/f is a chef and is using Globals at the moment, but they are not really that hard wearing, he has had them for just a year and needs new ones. But then again he is using them for around 14 hours a day, so they do get quite a battering! His brother in law uses the same knives for domestic use and his are still razor sharp.

You will need more than one knife if you go to Culinary School..... get a 8" French knife,,,,, a Boning Knife,,,,,,, a Paring Knife and a Bread Knife for a minimum,,,,,, the knives should have a FULL TANG,,,,,, GOOD BALANCE,,,,,,, AND EASY TO CLEAN,,,,,,,, SOLID IMPERVIOUS HANDLES,,,, I find that a combination of Carbon and Stainless Steel work the best and hold a good EDGE...... OK Brands are Chicago Cutlery,,,,, Dexter,,,,, Wusthoff,,,,, depending on how much you want to spend,,,,,,,, the good ones last the longest,,,,,,,,,,

The best you can afford. You could also try one of the T.V. shopping channels (Bid T.V./Price-Drop) as they often have kitchen knife sets.
