This is my favourite chicken recipe and not too expensive
You need:
One onion
1-2 cloves of garlic - optional
Some mushrooms - depends for how many but you decide.
Chicken thighs - get big ones as then you just need one per person - cheap and good quality meat
Tarrogon - dried - a good teaspoon
Chicken stock 1 pint
A small carton of cream
Fry the onion, add the chicken and brown a little. Add the stock and allow to boil for 20 mins or until cooked. Remove the chicken and keep it warm. Reduce the liquid to about have the amount. Meanwhile fry the mushrooms in a separate pan. Add these to the liquid. Add the tarragon. Take off the heat. Add the cream. Taste the sauce - season if needed. Add the chicken back to the sauce and serve with rice.
This is sooooooo good you have to try it and if it is for a lady or gent in your life you are on for a good night

Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Meatloaf
2.5 - 5lbs. hamburger or ground turkey (depends on how many you're feeding)
1/2 cup crushed saltine crackers
1/4 onion, chopped
1/2 tsp garlic, minced
2 eggs, beaten
1 can tomato paste plus 1 1/2 cans water, mixed
Topping
1 can tomato paste and 1/2 can water, mixed
2 tbsp. prepared yellow mustard
2 tbsp. splenda brown sugar substitute
In bowl, combine beef, onion, garlic, eggs, and crackers. Mix well and pat into baking dish or cast iron skillet. Bake 1 hr at 400, drain off grease. Pour water and tomato paste mixture over and bake for 30 minutes at 350. Mix topping ingredients and pour over meatloaf, bake another 30 minutes at 350 degrees.

box of generic mac and cheese (or seasoned rice mix), can of tuna (or spam or most any canned meat), canned or frozen peas or mixed vegetables. or cook up a pot of dry beans or split peas (simple recipe on the package), add ham hock, onions, season with seasoning salt. substitute cut-up potatos instead of beans if you like. starchy foods like beans, pasta and potatos are filling, nutritious, and cheap. season to enhance their flavors, and you have a nice meal. eggs also are a thrifty buy - lots of protein. zap a potato in the microwave for about 5 min, slice and saute the potato and an onion in a little butter.. make a nice, economical breakfast.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some good red wine and enjoy.

cook a pot of dryed pinto beans with a couple
slices of bacon or fat back in them.
Fry some potatoes with onions slice some tomatoes and cook a skillet of cornbread.
