BEST CHEESECAKE ON EARTH!
INGREDIENTS:
* 1 1/2 pounds ricotta cheese
* 16 ounces cream cheese
* 1 cup white sugar
* 6 eggs
* 6 tablespoons all-purpose flour
* 1 cup sour cream
* 1 teaspoon vanilla extract
DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C.) Wrap the outside bottom of a 10 inch springform pan with foil to prevent water seeping in while baking.
2. Cream together ricotta cheese, cream cheese and sugar until smooth. Mix in the eggs one at a time. Add flour one tablespoon at a time, mixing well. Stir in the sour cream and vanilla. Pour mixture into a 10 inch springform pan.
3. Place cheesecake in a large rectangular pan filled with 2 inches of hot water. Carefully put into preheated oven without spilling water. Bake for 90 minutes.
4. After 90 minutes turn oven off, but leave the cake in the oven for another 60 minutes (do not open door).
5. Cool on counter for 60 minutes and then refrigerate. Serve when thoroughly chilled.

You can make any cheesecake at home, but here's a REALLY simple one:
8 oz cream cheese (softened)
8 oz sour cream
8 oz cool whip (thawed)
1/2 cup sugar
1 store bought graham cracker or oreo or nilla crust (your preference)
beat cream cheese, sour cream, and sugar together until well combined. fold in cool whip. put mixture in crust. chill and serve. You can also get like a cherry or strawberry pie filling to put on top but I am a purist and love it just plain. Also this filling makes enough for one very well filled pie crust or 2 pie crusts filled just below the edge.

It doesn't matter what recipie you use as long as you remember to bake it in a water bath. If you don't have a pan big enough to be a water bath, put an identical round pan to the one you're baking it in full of water next to it on the same rack.
Always use real cream cheese. Always use fresh (not stale) graham crackers and real butter for the crust.

Have a look at this recipe. I have made it many times, and everyone loves it. You can easily change it by adding any kind of berries, or lemon/lime juice. I promise it will be a hit.
