Your standard Man on the Street--not more than 6 G's, that knocks most ordinary people out instantly.

If you are in good shape--8 G's

If you are in good shape and have a flight suit--anywhere from 12 to 15, depending on atmospheric pressure, the direction the G's come from (front to back being easier to resist than lateral or side-to-side).

And while it's been documented that humans can survive hundreds of G's for fractions of a second, anything more than 18 G's for a sustained period of time *will* crush a human brain against the inside of its own skull.

Strongest g-forces survived by humans
Voluntarily: Colonel John Stapp in 1954 sustained 46.2 g in a rocket sled, while conducting research on the effects of human deceleration. See Martin Voshell (2004), 'High Acceleration and the Human Body'.

Involuntarily: Formula One race car driver David Purley survived an estimated 179.8 g in 1977 when he decelerated from 172 km·h−1 (107 mph) to 0 in a distance of 66 cm (26 inches) after his throttle got stuck wide open and he hit a wall.[1]

It depends on what sort of condition your body is in. The more fit you are - the more you can handle (which is why astronauts have to train very extensively and exercise quite a bit in order to survive liftoff and their stay in space). On average, the most a person could handle is 4G's - but to even get to that point you need to be just about launching off the earth.
